    I don't know about you but believing in myself is hard for me! It's something I need to make a priority and to focus on daily. I need to come up with a mantra to repeat every morning and when I am doubting my abilities. Any ideas?

    Sweet potato and black been burrito

    Sweet Potato
    Black Beans (dry or canned, I use dry)
    Pickled onions (I made my own, you can buy already made)
    Salt
    Chili Powder
    Cumin
    Fresh garlic
    La Banderita wrap
    Avocado
    Salsa
    Cheese (I used Cotija)
    Cilantro (optional)

    Cut the sweet potato into bite sized pieces, brush with evoo and sprinkle with Himalayan sea salt, chili powder, garlic powder and cumin (425 approx. 45 minutes turning every 10-15 minutes)
    Cook the black beans and some minced garlic until soft (if dry, or you can used cans)
    Mash the potatoes when they are done and combine with the sweet potatoes
    La Banderita carb smart wrap (regular or whole wheat)
    Put the amount of mixture you want in the wrap, top with pickled onions, close the wrap
    Serve with avocado, more pickled onions and fresh salsa, and a dash of Cotija cheese (or any cheese of your choosing) and a sprinkle of cilantro.
