Hey Azetta! Hope you had a good day. Each day is a new one and each one brings new challenges. It is all the good decisions you make each day that add up to success. So hang in there! I think it is time you start learning how to cook good food. So here is a menu for you and your family. Give your Mom a night off and fix dinner. You cannot imagine how one night off from cooking can be such a relief.
Chicken Casserole (it takes about 10 mins to throw this together) Fresh fruit cut up
Here is how you do the Chicken dish. Turn your oven on to 400 degrees and let it heat up. Then get a casserole baking dish that is about 3 inches deep. Spray the dish with PAM so things will not stick. Place one chicken breast (without skin or bone) in the dish for each member of your family around the outside part of the casserole dish. Sprinkle paprika on the chicken like you would do pepper. In another bowl, heat up in the microwave 2/3 cup of H2O with 2 Tablespoons of margarine in the water. Then mix 1 box of Stove Top stuffing in the water and butter to moisten the stuffing. Pile the stuffing in the middle of the chicken dish. Then pick a favorite bag of frozen veggies...I like the one that is called Latino Veggies....it has corn and black beans in it. Sprinkle half of the bag on top of the chicken and stuffing. Then take one can of 98% cream of chicken soup and add just a little bit of water to it to make it a thinner consistency. Pour the chicken soup all over top your veggies, stuffing and chicken. Put either a lid on it or aluminum foil. Bake in the oven for 30-45 minutes. More like 45 minutes if thick chicken breasts. That gives you a starch, a meat and a vegetable for your dinner. While this is cooking, fix your favorite fruit salad. I like oranges, strawberries, grapes and blueberries. There you go girl!! If your mom has all of these ingredients, you are in business and your family will be amazed over the great meal you fixed them. For tracking purposes, A serving that includes the Chicken Breast, stuffing and veggies = 300 calories. Good luck and let me know how it goes!! You can do it!!
