Lots of walking in store for today at one of the many Fall festivals in NE Ohio!Posted a photoCompleted 7 days of food feats and 14 days of the whole foods plant based diet. My biggest challenge is food prep. WFPB takes a loooong time. So this Sunday, I soaked & cooked grains and beans! #foodfeats #wfpb #plantbased #veganPosted a photoPosted a photoPosted a photoPosted a photoRoasted squash with a quinoa stuffing for dinner. I added black beans for more iron. And I am using up my last batch of pico de gallo as a topping & for when I scrape the rest of the squash. I can't believe how delish this is, and ALL made without oil! #foodfeats #wfpb #plantbased #veganToday's breakfast: Irish oatmeal with chopped walnuts, fresh blueberries & freshly ground cinnamon. I add cinnamon throughout the cooking process. I usually don't have spillovers, but if the liquid spills over it looks & feels like gooey apple pie sauce! #wfpb #plantbased #veganExample of a "meat & potatoes" husband's look when his wife tells him she's permanently adopting her Whole-Foods, Plant-Based diet. #wfpb #plantbased #veganPosted a photoPopeye is confused about the kitchen scraps he gets since I adopted the Whole-Foods, Plant-Based diet. I should say, "scrap" as he only likes carrots. I slice up a baby carrot and toss him slices. Sometimes he just walks away looking dejected. #wfpb #plantbased #veganThis past weekend, I went to the Prairie Peddler Festival in Butler, OH. I always look forward to my favorite festival guilty pleasure (a corn dog), but I wasn't even tempted and I didn't have any of the festival food. Instead, I took a Honeycrisp apple and sandwich #wfpb #plantbased #veganMy BFF signed us up for a French Macaron class before I adopted WFPB, but we attended it last night. I'm still shocked I did so well. My husband was too. So much so, he had 2 right before he went to bed! I have no idea how he got to sleep. I sent the rest to work with him.Went to the annual Ohio Mart at Stan Hywet in Akron yesterday. 130 artists and food vendors, but I've been many times and I zoom through it, looking for new or specific artists. And that took an hour, so lots of walking, walking, walking. Plus the day was a classic, crisp, fall day and the gardens were beautiful!Made Forks Over Knives' awesome "Hearty Vegetarian Chili" for dinner last night. What a great sauce! I highly recommend it.
#wfpb #plantbased #veganHere's a pic of yesterday's "XL/XXL clear-out goal". It also shows the hidden Christmas present that I found. I think I bought it for myself, because one is on my list! Today I put almost all my pants in the donation pile. Gotta go shopping!! #goalfeatsPosted a photoWow, I walked down to the basement this morning and didn't forget why when I got there. It's gonna be a great day!Cold front & rain moving through northeast Ohio today. Looking forward to fall color, like this (not my pic), starting back up!Happy Sunday! First frost advisory today in northeast Ohio, but lots of sun forecasted, the perfect day for a fall festival and there are so many to choose from. However, Popeye is having none of it and burrowed back under the covers and I just couldn't get mad at him messing up a freshly made-up bed!Yesterday I attended the largest Fall festival on my list called "Christmas in the Woods", in Columbiana OH. I'm sure we missed at least 1 street, but we covered 3 twice trying to figure out which one. Beautiful Fall day, and we had to park in a meadow far away, so lots and lots of walking. My feet still hurt!Base painted the living room wall for our reclaimed wood wall. Surely I burned more calories when trying not to fall off the ladder when I was cutting in, eh?Set up new 7-day challenge to try new ingredients used in many vegan and WFPBNO recipes. Today I made a 'Cream of Mushroom' soup from 'Forks Over Knives". The new ingredients were 'almond and garbanzo bean (chickpea) flours'. They replaced the cream and blended perfectly! Next time, I'll double the mushrooms because it tastes really good when a piece is in the spoonful. 3 hrs of blowing and raking falling leaves today. At some point, Fall was no longer beautiful, but I sure burned a lot of calories! (Picture taken Saturday, before the leaves all turned gold started to fall like rain)I just learned about 'fermenting tomatoes'. Has anyone else done this? It looks simple, so I'm going back out to the compost pile to fish out the green cherry & roma tomatoes that I tossed the other day (don't judge, I had a humongous crop this year).I don't dislike Fall today. Tomorrow may yield a different story if I don't have to blow or rake the leaves though. LOLAs part of my daily New Ingredient Challenge, I brought my food processor up from the basement (I don't think I've used for it for 20 years!). Made a creamy no-oil Italian salad dressing with white beans. It is delicious!Faith restored in Fall! I hope this pic looks as awesome as I see it live from my front door.Posted a photoPopeye thought this morning was the perfect day to turn on the fireplace. And he's not moving anytime soon, even for breakfast. If you're having a tough day, here's a baby pig.Posted a photoI used to have a cat that would turn off the lights by pulling out micro light bulbs with his teeth.Posted a photoPosted a photoPosted a photoPosted a photoPosted a photoPosted a photoPosted a photoPosted a photoPosted a photoPosted a photoI had my yearly physical yesterday and the doctor said I could stop taking the Statin!
Doc was surprised with my cholesterol test results, and that I was no longer anemic (me too). I then told her about adopting the "whole food plant based no oil" lifestyle and she asked what inspired me to make the change. I told her about the documentaries, "Eating You Alive" & "Forks Over Knives". Another surprise... She wrote them down, saying she'd watch them!Did you make or decorate a gingerbread house this year? Last year, my gingerbread kit was a disaster, but this year my BFF and I bought Oreo's Holiday Chocolate Cookie House Kit. We only added a few extras (such as the lawn snow and foil-wrapped decorations), but it's mostly kit ingredients.Posted a photoPosted a photoMerry Christmas!Last Christmas post... Popeye is STILL thrilled with his new toy. Look at that tail, he's wagging it so fast, it's a blur!
