Day 28 of Bootcamp!!!! DONE!!!!

I did it! 28-Day Bootcamp, DONE! I just finished my cardio for the day and that officially ends my bootcamp! I can't believe I finished it, and on the first try! I have to tell you, its a huge sense of accomplishment. I didn't realize I was even capable of doing it. I went into it determined to finish, but there was still that nagging voice in the back of my mind telling me I wouldn't complete it the first time out, so prepare to try again. You know what? That voice is an idiot!!! Because I DID IT ON THE FIRST TRY!!! And that's at 285 pounds people! That's right, the fat chick can work it out!
I start week 3 of Spring into Shape tomorrow, so its not like I won't still be doing the same stuff. That's good, because I won't lose momentum. I can't afford to lose it either, because I'm still in the 4th of July Biggest Loser challenge too. The timing for that is good, because I have my first weightloss goal set at 264 lbs by the end of June.
We had Austin's birthday today. I'm now the mom of TWO teenagers. Someone just kill me now. I tried to tell him he wasn't allowed to be 13 yet, but he wasn't buying it. He wanted to go out to eat for his birthday, and of course he picked IHOP. Its his favorite place to eat. I talked him out of it though. They don't have a lot to offer for healthy eating. So instead we went to Cracker Barrel. He could still have his pancakes (he had the multi-grain ones with granola in them) and I could have a salad. They have their new summer specials right now, so I got a grilled chicken strawberry salad. It was really tasty. Grilled chicken, spring mix greens, fresh strawberries, pineapple, sunflower seeds and a balsamic vinaigrette. Its amazing how they even try to make a salad unhealthy. They serve the dressing in one of their side dish bowls, and of course its full. If I had to guess, I'd say its at least 1/3 cup of dressing. As the waitress set the food on the table, I drizzled about 2 Tbsp of dressing on my salad and made her take the rest with her when she left. AVOID TEMPTATION!! I also ordered a side of mashed potatoes, no gravy. It was a nice breakfast/lunch. I didn't actually get breakfast today because I slept till 10am. I would have been up sooner but for the past 3 nights, I've coughed myself out of bed at around 4am. Not conducive to early mornings. lol
So after we ate, we ran to Walmart *grrrr* so I could get the ingredients for Austin's cake. I would have gone to Dillons, but I also needed a knee brace. Its not as bad as it was, but still acting up from time to time. Anyway, I got everything I needed, plus some. If you haven't tried them, pick up a bag of Sensible Portions Potato Straws. A serving is 38 "straws", which is HUGE for a snack, and that's only 130 calories. They're in the chip aisle, above the rice cakes. They're healthy, and only cost $2.88, so of course they put them as high up on the shelf as they can without actually hanging them from cords coming down from the ceiling. lol
When we got home, I did my videos for the day (SIS once, 28-Day twice), then danced around in the kitchen with Austin and Taylor. I'm counting that as a DONE Girl Dance. lol Anyway, we got everything ready for the cake and Austin helped me make it.
I told you I'd post it if I found one that was any good. Well I found a good one! Its on the Spark Recipes site. I HIGHLY RECOMMEND saving it to your recipes. I'm making it again for Taylor's birthday next month. So yummy! Here's the recipe:
Guilt Free Pineapple Orange Cake
1 package yellow cake mix (I'd recommend a low sugar version if you can find it)
1 can (11 oz) mandarin oranges, undrained (generic has less carbs and sugar)
4 egg whites (used egg beaters Whites Only, 3/4 cup)
1/2 cup unsweetened applesauce
1 can (20 oz) crushed pineapple, undrained (generic has less carbs and sugar)
1 package sugar-free instant vanilla pudding mix
1 carton (8oz) reduced-fat whipped topping (I used Cool Whip Free instead of Light)
In a large mixing bowl, beat the cake mix, oranges, egg whites and applesauce on low speed for 2 minutes. Pour into a 13-in x 9 in baking dish coated with nonstick cooking spray.
Bake at 350 degrees for 25-30 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack.
In a bowl, combine the pineapple and pudding mix. Fold in whipped topping just until blended. Spread over cake. Refrigerate for at least 1 hour before serving.
Makes 15 servings.
I think next time I may add a little orange zest or maybe a couple tsp lemon juice, just to bring out the citrus a little more. It is such a moist, tasty cake. I wasn't sure I'd get all the topping on it though. I just kept adding and it kept getting higher and higher. lol It doesn't make it overly sweet though. I guess if you wanted to, you could cut the topping recipe in half and save some calories and sugar. Even with all the topping on it, a serving is only 210 calories. The carbs aren't too bad either. Don't remember exactly, but you can check Spark Recipes or my food tracker for the exact number. WARNING: this is NOT a diabetic-friendly cake. There are 58 grams of sugar for a serving!
After dinner and cake, Taylor finished cleaning the kitchen and then we went for a walk/jog. She did more jogging than me, but that's to be expected since she's an almost 15-year old that weighs a whole whopping 130 lbs. lol She still managed to get a workout though because when we'd jog (4 times!!!), she'd either do high knee jogging or she'd jog ahead about a half a block then circle back and meet up with me again. And when we were walking, she'd do high knees, kick-backs, LUNGES!! Oh what I wouldn't give to be a teen again, without the extra weight and body aches. lol
So that was my day today. You know, you don't realize how active you are until to type it all out like this. Maybe I should rethink using the journal feature on here. I'm not near as couch potatoish as I thought I was. lol
Oh, and did I mention? I COMPLETED THE 28-DAY BOOTCAMP!!!!!
