Before I get to my impending torture, I'd like to talk about the Never Been Skinny team. You guys are so sweet! I can't believe I'm NBS Member of the Month! I have to tell you, I'm truly honored. I just can't believe it! There are so many wonderful people on the team, I'm really a little overwhelmed that its me. Thank you, really!
Today was a rough day at work. I'll be glad when I can get another person hired and trained. It'll make things a whole lot less hectic. After work, I came home and made some "nachos". They're very tasty and easy to make. I used a serving of baked Tostitos Scoops ( 14 chips YAY!!), a little less than a 1/2 a cup of low fat shredded cheddar, half a cut up roma tomato and its supposed to be 4 oz of chicken breast, but I used a chopped up Morningstar Chik'n Patty (I very much prefer fake meat to real meat). So if you have a toaster oven, that's great. If not, you could use the oven. Maybe put it on a high temp, and only cook them long enough to melt the cheese. So I put a little cheese in each scoop, topped with tomato and chicken, and a little more cheese on top. Put them in the toaster oven until the cheese is melted, then you serve them with salsa. I used about 6 Tbsp and it was plenty for 14 chips. Very yummy and it satisfies that cravings for chips.
We watched Auction Hunters and The Office, then did come cardio. We have Cox for our cable provider, and on the On Demand channels, it has Exercise TV. I did two dance workouts on there. I didn't know how to log it, so I logged it as Zumba, since that's basically what it was. It was quite a workout! I haven't done Zumba for a while, and I'd forgotten about the leg burn. Boy, that's nothing like walking and jogging! lol
I signed up today for another Biggest Loser Challenge. This one is on the 30something's team. And I'm going to be a motivational leader for the Red Hots! I have to thank Tisha for this. She's the one that encouraged me to do it. And FYI: we're going to kick Purple butt! lol
I did my "before" pics for my 28-day 10-Minute Trainer program. The ones in my shirt are in my pics. The sports bra ones aren't ever going to see the light of day! lol I'll post here daily for the 28-day program. I find that logging it daily helps keep me motivated and honest. If I have to blog about it, than I have no choice but to do it. lol
