Mirepoix fancy name for common sense

Mirepoix is a favorite refrigerator item that helps me prepare healthy meals when I get home from work.

I've been happier about it now that 2 of my local grocery stores already carry the ingredients pre-chopped. And might I say that they do a much better job of uniforming chopping the onions, carrots and celery than I do.

It's fewer than 50 calories for half a cup. Add some tomatoes and when you saute your salmon, wow, the calories and flavor stay pretty low.

Had a bad day of calories at work? Reheat your mirepoix and stir fry it with tofu marinated in soy sauce. A slice of tofu from one of this extra firm boxes is also less than 100 calories. That's it folks, 100 calories for stir fried mirepoix and tofu.

Here's how I make it:
Equal parts of chopped onion, chopped celery, chopped carrots (finely chopped to small cubes)
For extra flavor, sprinkle with dried vegetable powder.
Saute with a bit of olive oil for about 15 minutes.
Refrigerate until you need it.
