Snow Soup Recipe

Saturday, December 14, 2013

Our all-time favorite soup

2 cups water
2 beef bouillion cubes
1/2 cup chopped onion
1 cup whole kernel corn
1 cup peeled and cubed potato
1 cup carrot slices
1 pound ground beef-the leanest you can get
1/2 teaspoon salt-optional
1/2 teaspoon ground pepper
1/2 jar Cheez Whiz

Brown ground beef with the pepper and add onion,
cooking until onion is soft.
Dissolve bouillon in water and place in a large kettle. Add
ground beef, onion and the rest of the vegetables.
Simmer on low heat until the vegetables are soft
and fully cooked. I like to simmer for at least 30 minutes.
Just before serving, add Cheez Whiz and stir gently.

I usually double the recipe and it makes enough for
a great meal and plenty of leftovers for lunches during
the week.
Adjust the amount of Cheez Whiz to taste. With all the
sodium in it, you can see why I say salt is optional.
Hope you enjoy this as much as we do. DH adds a dash
of tabasco sauce for flavor but I like it just the way it is.

Happy Saturday!
