Persistence is the key to success. I'm doing my very best to get back on track (yet again). Now that the weather is nicer, I can spend more of my days going out for a job on my Kung Fu off days. My struggle has never really been with the fitness aspect though; it has always been with food.
I'm putting my foot down (yet again) and working hard to revamp my diet and get back to eating better. I know what healthy eating is: eating less processed foods and more vegetables, eating only when hungry and not when bored/emotional, and drinking more water. I know these things. It really isn't a difficult concept! I just need to force myself to start doing it.
This week I'm back on track. Yesterday I made myself two eggs and some turkey bacon before work because I got up really early. For lunch I went to the cafeteria and made myself a salad, but it was really boring and unappetizing. Dinner was homemade "taco bowls" which consisted of turkey taco meat, cheese, lettuce and a homemade cilantro/lime sour cream. Overall it was a very successful day. I may have eaten a bit too much of the taco bowl portion, but the salad wasn't enough yesterday.
Today, I skipped breakfast (because I was busy and wasn't hungry) but I did have coffee with some cream in it. For lunch, I made a salad from home to bring with me. It's a spinach, cucumber, strawberry salad topped with crumbled goat cheese and toasted almond slices. I didn't have time to make a vinaigrette, but I used a bit of balsamic vinegar and that tastes pretty good on its own.
Dinner will likely be something quick from Panda express, but I already have it planned out. I'll have the vegetables as my side and the Kung Pao chicken and grilled chicken as my entree. Overall it's a healthier choice and gets me to class on time.
I feel good being back on track. I just hope that I can keep up with it.
