Getting closer.
Making a frittata on a flat pan or in muffin tins (horrible to clean up) is a great way of making breakfast ahead of time. It warms up nicely and DH says they often taste better the next day. Be adventurous. I have used every veggie in my refrigerator. Peppers, onions, mushrooms, broccoli, spinach, kale, tomatoes. I have used no seasoning, Italian and south west seasoning. I found a compliant pizza sauce. After the eggs are baked almost done I spread it all over the top. We love bacon and black olive pizza so top my frittata with that. Today I added bacon and fruit.
Lunch was leftover chili and a salad. Alas, still no picture.
For dinner, my SIL grilled steaks, I am not a great fan of steak, I'd rather eat a good burger, but it was a great dinner. I roasted some sweet potato spears and some brussels sprouts. It is never a bad time for cherry tomatoes.
I had a cup of tea and a half an RX bar for a snack. Also, some prunes.
