messing with me

This getting up at 4 a.m. is clearly messing with me. I just have to find my way back to a more accommodating schedule. I think it's the time change that started this. I feel so much better when I can go to sleep around 9.30 p.m. and get up between 6 and 7 a.m..
When I wake up in the morning I usually can't go back to sleep, so I just get up. Today I am trying to stay up until 10 p.m. and sleep until 7 a.m. Let's hope I get back on track fast, because when I get up early I am hungry all day. Sounds dumb, but that's how I feel. I am probably not hungry but bored since I have all this extra time. I even work out early, but there is still too much time on my hands.
This morning I already made a dress for my grand-daughters American Girl Doll "Blossom" and baked bread rolls. I am trying out my favorite recipe to make sure it still works fine. I want to make them at Thanksgiving and wasn't sure if the yeast is still working. It's been in the fridge for a while since I have not baked recently with it. I tend to eat all the rolls, so I just didn't bake. But we are having Thanksgiving here, so I needed to test my recipe. These rolls are going mostly in the freezer for hubby and me. I take out just 2 rolls at a time for our dinner. I made a ton of dinners ahead of time so all I have to do is pull one out and heat it. They are all portion controlled and low calorie to lead up to the Holiday.

My hubby loves mashed potatoes, so I played around with the "recipe" (who really needs a recipe for mashed potatoes) ... anyway I added cauliflower and carrots to it. I often hide cauliflower in stuff since nobody likes it in our family and carrots because my hubby won't eat them if he finds them in his food. I made cream of broccoli soup earlier this week and did the same thing. I cooked cauliflower, carrots and lots of broccoli and put them in the food processor. When it was basically mush I added it to a can of cream of broccoli, a can of cream of chicken and added 2 can's of fat-free milk. I put all of it in the crockpot, seasoned it and let it simmer all morning. So yummy... made several meals for later, too.
