Today is a cooking day. I have two slow cookers already started. One has a turkey breast in it, it's fully cooked but frozen and needs about 5 1/2 hours to be ready. I Found this one a few years ago in the freezer section and been buying it whenever I see it. It's seams to be seasonal. So I try to put one or two in the freezer for when the store doesn't carry them. As much as I love turkey, I really don't like the dark meat or the bones and rather not deal with the mess of cooking a whole bird. It's just the two of us, so why bother.
The other slow cooker has some sweet potatoes in it. I love them cooked this way, when they are done all I do is split the skin and add what ever I feel like at the time... butter, brown sugar, and/or cinnamon are most common for me. Or we eat them just like they are; healthier that way and oh so good.
I am baking special rolls today (dough is working in the bread machine). I am also making a meatloaf loaded with vegetables and flax meal. All that will build the base for the meals for the rest of this month. lol, makes it sound so big, hah; it's just 5 days of food before February starts.
