CHALLENGE COUNTDOWN DAY 5

Am I the only one that stayed up late last night to watch the Grammy Awards? Some of it was awesome and some not so much, but I love Alicia Keys who was the M.C. So much talent.
Late night, late to rise this morning. I thought it was going to be just an ordinary day. It turned out to be extraordinary!
I thought I was only going to see a 30 second glimpse of some desperately needed sunshine, but when I got out of the Y the sun was shining bright. Before I got into my car I made sure I lifted my face to the sun and took in some deep cleansing breaths. It was glorious!
I wanted to try another new class today. One that worked my abs, but there was a miscommunication and so I only got in on the last few minutes. None the less, I had a great workout on the Elliptical using the Fat Burning program again. I worked up a sweat and it felt great!
Breakfast turned into a WFPB brunch of Rice, Black Beans, & lots of veggies. Then I got started on dinner. Who ever said Beef Stew was easy! I haven't been happy with my "No Peek" recipe the past couple of times I made it so I decided to try something new today. Browning all of that meat in EVOO doesn't make this dish low cal, but it was delicious! ! ! When I asked my dad to dinner this morning and told him what was on the menu I could hear the hesitation in his voice. I knew Beef Stew was not a favorite of his, but he wanted to join us just the same. By the end of the meal he was asking to take home left-overs. So I guess this recipe will be a "keeper"
We watched Ninja Warrior on TV tonight. The competitors blow my mind. I sit there in complete awe of their strength for 2 hours. DH prepared his bowl of pop corn. When he asked if I wanted some I replied "No. I'm not hungry". Perhaps as more of a reminder to myself that food is meant to be fuel. But to my DH? Nope. He said back to me "Oh, we are supposed to be hungry when we eat?!" DUH! Yup.
So all in all it was quite an extraordinary day with many high points and I am so grateful! I hope you found some success and some extraordinary moments in your day too!
