Accidental Soup

I am not a vegetable lover so imagine my own surprise when I decided to switch to a plant based diet. I do eat salads sometimes and vegetables every night with dinner but it's been a chore since childhood. I would eat my vegetables first to get them out of the way, so I could enjoy the rest of the meal. That's how my grandmother got me to join the clean plate club, membership was a must.
Anyway, I like making soup (something I did not enjoy as a child) I tried the you tube videos on how to make my favorite Autumn squash soup like the one at Panera Bread but it uses cream and I can't have dairy so it never comes out the same. But I eat it anyway because I spent the money on the ingredients.
Ok here's the happy accident. For lunch one day I decided to make a grilled cheese sandwich with my vegan cheese and mixed vegetables. I told myself I would just eat the vegetables and enjoy the sandwich. After looking at the cooked vegetables and wincing at the green beans, wondering if they were going to be waxy (yes, I am a big baby about some things, lol). I decided to through the vegetables in the blender with some salt and pepper and garlic powder. ]Voila, I have instant soup from a dollar store bag of frozen vegetables.
Then I sat down and enjoyed my vegetables and daydreamed about what it would be like to sit with my grandmother eating this cup of soup.
