cut this recipe in half to make smaller portions...there is only 3.6 grams of fat and 71 calories....to be creative add it on tostada shells...add lowfat cheddar cheese.....or serve on a large lettuce leaf....the possibilities are limitless!!! ENJOY!!!
my recipe makes up to 16 servings
In a Large Mixing Bowl
Add two packages of imitation crab meat chopped
1/4 c or 8 tbs cilantro chopped
1 lg cucumber w/peel chopped
1 lg Jalapeno finely chopped...wear gloves for protection
5 lg tomatoes chopped
1 lemon-cut one end off and squeeze as much juice as you can ...(watch for seeds to fall out)
Mix well!!!
You can serve this by itself or add it to corn tortillas (Tostada style) and garnish with a pinch of cheddar cheese.
This does increase the fat...Mexican style will add on another 10 grams of fat per crab tostada
by itself as a salad...its has only 5 grams of fat per 1 cup

there is absolutely no cooking involved. This is a perfect summer salad, main course, or side dish...you choose!!!

Malt O Meal has 28 mcg of Vitamin B-12. I also have hypothyroid and I eat alot of whole grain cereals. I have a crab salad recipe I think you would enjoy if you want it. I have it posted on Sparkrecipes but I will just give it to you if you like to try it. It doesn't taste fishy at all....my daughters despise fish and love this salad!!! Just let me know emoticon emoticon

Oysters have a different flavor than crab. It probably doesn't mix. I like fried oysters, but not on the half shell. I guess if you still have problems, you can get the injections, but putting chicken or fish in your diet several times a week and then soy or a combination of beans the other days. Even milk and cheese have protein.

Log your intake into Spark and have it look at the nutritional information for you so you can adjust your intake to be a balanced diet. That is the best you can do. Eating for a special thing unless it is recommended by your doctor is usually not necessary.

i have thyroid problems too for some reason thyroid problems drain the b vit too. i have heard allot of people on thyroid medication or need it have the same problem i do. i thought i was getting enough b 12 cause i am trying to eat protein each day. i don't care for meat much at all. at one point in my life i did not eat any at all except chicken every week or two that was it. but i have been trying. red meat i rarely have . trying to eat fish twice a week and all. i just ate some really masty crab cakes i made put clams in them clams are huge in b 12 vit. second only to liver.
anyway i guess i got to work on that recipe. i will eat them all tell they are gone masty or not they are real good for me.
i am not the best cook in the world.. but i try. just me ginger. emoticon I am laughing bout it cause that is just me and i have allot of other talent cooking not really

B vitamins are water soluble and come from meat and protein sources. You can take a supplement of B vitamins also if you think you are short but most of us get them every day. The water soluble vitamins must be taken every day. They are not stored. Others are stored short periods.

i have been tracking my nutrients and all cause about four years ago i had to have b12 shots i almost had pernicious anemia.. which is real bad not getting enough b vitamins . do anyone you have a good recipes or two on how to get more b 12 vitamins
