Your recipe sounds good. I usually bake slices of eggplant till the moisture is reduced and then layer it with tomatoes,garlic, green peppers, onion, and some times cubed summer squash. I also use no fat/low fat (ricotta or cottage) cheese and sprinkle some grated cheese on top. Then bake. Oh I don't have a George Foreman.

Hi Dawn,
Just started with Spark and like you, I'm trying to keep the motivation real... Just wanted to pass on something that I do when I'm hungering for eggplant parm or lasagna. I slice the eggplant thin and cook on the Foreman grill just long enough to remove most of the liquid and then use the grilled slices as lasagna noodles with fat-free ricotta, part-skim mozzarella and sauce to build an "eggplant" lasagna that I cook in the crock pot. I'll often add a couple layers of spinach that has been sauteed in a little olive oil and garlic. Eat a small serving of this with a nice sized salad and it's delicious and satisfying. I was a little apprehensive about using the fat-free ricotta but it's actually very good...

Been trying 2 stay on track with things even though I have had some slip ups lately. I lost motivation again but I'm getting up 2morrow with a new outlook!! I am faking it til I make it, Yes an addicts saying and believe my addiction and love of food runs deep but finding a new way 2 appreciate it and appreciate my body with good healthy ways 2 snack and 2 create meals. Have started my Meatless Monday with a casserole of tofu eggplant and mushrooms were the "protein". Hate 2 do this but Hubby wants eggplant parm 4 dinner this Monday and gonna make it but want and need some good meatless dishes that are packed with protein and flavor but not always red!! Havent lost and but havent gained any either!! Live near a park where I do 6 laps around and is equal 2 2.5 miles. Want 2 start a walking club in the morning and the evening 2 keep me motivate and accountable. Have some pounds 2 lose and hopefully can get started again in doing that!!

I would rather have the pain of a workout then the pain of being overweight!!

NO EXCUSES!!

I've done horrible. Most of my binges have been on healthy things but binges none the less and now I have to go on an even stricter diet plan for my upcoming surgery to try and lose weight and I don't know if I can manage long with out some of the things they want me to either cut out or only have a tiny portion of...

I'm already pretty good about not adding sugar or salt to my foods. I use Truvia as a zero-calorie and all-natural sweetener in my coffee and on my fruit and I actually despise when food is too salty...the only problem is, my Irish boyfriend puts salt on EVERYTHING. A lot of times when we share a meal, he'll drown the food in salt making it nearly inedible for me. I've been trying to get him to cut back and he's really doing a good job but it would be great if he could cut it out altogether. Not to mention, traditional table salt has usually been refined with chemicals and is really not good for you at all.

Almost at the half-way mark, don't stop. Push harder. Let's cut out added sugar and salt from this week until the end of the month. Cinnamon, ginger, olives, cayenne pepper, etc are excellent low calorie, low inflammation spices.
I'm following Perricone MD's Perricone Prescription this month, so changed my relationship with food. Not too mention, the meal plan is amazing. Today I had smoked wild Alaskan sockeye salmon, steel cut oatmeal with cinnamon, blueberries, chia seeds, and green tea for breakfast. I feel great. The battle is always with portion control and it's great seeing how well we are all doing together. Keep it up. We're almost there and look how far we've come!! Let's do this!!

She nearly caused a scene in the supermarket. I wouldn't let her get cookies. We got vanilla soy milk (never tried it before), fresh fruit, brown rice, turkey breast, lean ground beef (since there is a ground turkey recall), and 2% string cheese.

There is this bratty little kid inside of me who just won't behave around food. I can't seem to get her to exercise portion control. She refuses to give up processed foods. Vegetables are taboo. She'd much rather exercise until she drops than hand over the yummies.
Any suggestions?

Breakfast/Brunch: 1 cup Green goodness, 1 cup carrot juice, 1/2 cup of pomegranate juice, 1 banana, 1 scoop whey protein powder (first day trying it out) and about 8 ice cubes... That was my breakfast smoothie.

Dinner: Salad, 4 different bell peppers, broccoli, unpeeled cucumber, 4 slices of 95% fat free turkey, 1 stick of reduced fat colby jack cheese and about 1 1/2 cups of sliced mushrooms with Fat free Red Wine Vinegrette (I can't spell that word to save my life you know what I mean).

And I'm about to have a good night snack of 3 Rold Gold Pretzel Rods which is 110 calories for 3. I came really under I didn't even make 1000 calories but I'm also not starving plus I went food shopping today and bought only good things. OH and I forgot! Bud light with lime... Thats my little treat to me... Got to go track that right now...

Edit: Those empty calories from my bud light/lime and the sandwich that came afterward plus the extra serving of pretzels :( I went over my limit... Going to try to do better today although so far its not coming along as I hoped.

We all have days that we blew it. Delighted you are not beating yourself up. I have issues with my knees and feet and have had to find ways to work with and around these challenges. Focus on doing some upper body cardio, weights, planks, pushups, core ball routines and so on. There is a lot you can do. As for lower body cardio find a pool and walk in water as deep as you can. Swing your legs from the hip, tread water, do bicycle motions, side kicks, flutter kicks. No pool you can use:. any water will do, be creative.. It is possible to get good and varied workouts without stressing your injured heel. My mantra when it is almost too hard to do is "This is easy. I can do this." With enough effort I usually can and I know you can also.

I really blew it yesterday, went over limits by so much I'm to embarressed to say, but for some reason I feel in control. Not going to panic, just going to lower my calories by a few (maybe one hundred) each day to undo some of the damage. I'm thinking of mall walking to burn some calories but tendonitis in my heel is very painful, don't know if I can do it. Bike riding may be better. Also mall walking may turn into mall shopping, not good. And food court stopping! really not good! Anyway it is 8/5 and I need to get my butt in gear!

Breakfast was a mixture of Bolthouse Farm Juices. Green Goodness, Carrot Juice and Hawaiian Holiday (passion fruit, orange and guava).

Lunch was salad, there is too much in there to explain, if my nutrition thing is visible for other people to see you can see all of the ingredients but it was 229 calories

Snack I had my protein drink from bolthouse farms protein plus (chocolate)

And dinner was Lentil Vegetable soup 1 cup. Total calories for the day 1,023... That is not including my coffee I think I went into more detail in my blog so if you want to read that I update that with my daily activity.

I still may have 3 pretzel rods that are 110 calories for 3 but not sure yet, its time for bed and I just had that soup even though I wasn't hungry so who knows...

I decided in addition to eating within my meal plan and tracking my nutrition, I'm going to consistently take Omega 3 , calcium, and a multi-vitamin for the remainder of this month. Here's to a healthier August! Great start!! Keep up the good work everyone. As with any slip, the easy and quick fix is getting back up. How many of us trip and fall only to stay down. We get up, we keep it moving, we keep going more aware than we were before. Let's do this!!

CHARLOTTE- Thank you for giving it another try. Nutrition is a large part of the battle, so if we master this portion, we almost guarantee success. The key is being honest about your activity level in relation to your calorie allotment. If you're not losing weight using the calories set for you, either the activity level needs to increase and/or the calories need to decrease.

PRETTYBLULUV- It's still early, there's plenty of time. Don't be so hard on yourself. We're in this together. You post as much as you need to help keep you on track, to keep your mind on your nutrition. Some people need to post daily, some may just check in. We're all in different stages with the same goal, the same intent. You can do this. Incorporate a lot more water into your day. If you're like me, I cannot get into plain water, I have a lot of green or ginger tea. That works too. As long as I don't add any sweetener or extras, the brand I use is calorie free. Find you're way. Eat healthy foods within your calorie allotment, drink calorie free liquids until you're full. You don't have to follow the meal plan you can define your own meals, but the tracker keeps you accountable and if you find yourself struggling, that accountability keeps you aware of the good and the bad nutritional habits. I'm here for you. We're all in this together.

LMAC- I nabbed the following from the about.com nutrition site. Hope it helps give you a general idea.
Processed foods that may be bad for your diet:

Ok so this challenge is going to suck for me. Although yesterday I went grocery shopping and bought NOTHING but healthy foods. I ate a healthy breakfast of 1/2 cup of fat free Banilla yogurt and a small banana. And then I came home and had a huge binge on one of the largest wedges that they probably make in NY State and 5 hours later I'm still uncomfortably full from it. But I will try. Will I have to post my meals daily or what? Not sure how this works. And do I "have" to use the suggested nutrition tracker?

Hmmm let's do this...My first and most challenging focus is eliminating refined sugar.

It's not about the calorie count at this point. Just got back with a sampling of dried fruits: figs, papayas, apples, and others. So far, they don't "hit" the spot ... and I have no intention of reaching for the cookies. emoticon

I'm in. I make a fruit smoothie for breakfast several times a week. no fat plain Greek yogurt and skim milk with ice. I add a tsp of raw honey to it. I track food every day!

I'm dreading this challenge. Activity is no problem for me. I've become quite the gym rat. Food...now therein lies my weakness.

I was getting better about the whole fruits and veggies thing there for awhile. I started going to the farmers' market every week, and trying out new produce. That was short-lived. Processed foods are a main staple. Especially over the lazy summer months. Who wants to spend a lot of time in the kitchen?

I DO track my foods on WW. There's a plus!

BARDBL- I tend to lowball on my calories anyway as my version of active may be another man's sedentary lifestyle. If you haven't loss weight yet on the diet plan, it may be allowing for a higher activity level. When I first joined Sparkpeople, I had a totally different activity level. I recall noting my activity level at the beginning, but as far as I know, the site doesn't automatically shift based on what you plug in, besides weight loss/gain. (Unless this is only true of Apple computers,) I had to manually adjust my calorie intake once I amped up my routine. Please correct me if I'm wrong.

I'm sticking my toe in. I've been tracking since May but just lately have been slipping a little, so I'm re-commiting to tracking. I dropped all artificially sweetened drinks and drink mixes in May, will definitely continue that as I have seen some great benifits in not drinking that stuff. Have been slipping on the fat + sugar combo stuff (cookies, moonpies and ice cream sandwiches crept back in last month) so am re-committing there. Will also re-commit to no fast food. HOWEVER! There is the small question of what to do with that pound of bologna and that big bag of hotdogs I just bought! That darn bologna is calling to me right now! I will not eat it for dinner! I will not eat it for dinner! I will not eat it for dinner! I will have four oz of steak, two (not four) little red potatoes and a nice big salad! I will not have the bologna!

We all need so kind of help ! I'm still fighting i lose 22lbs but cant get out of it i need to lose 50 pound more . I think I'm eating right . Who know any more .It's a CHALLENGE for sure!!1 emoticon

I did my numbers with that, and got about 600 cal/day higher than SparkPeople gives ... with that site not talking about exercise, and SparkPeople knowing all about what I do ... and I haven't managed to lose any weight in a couple months using SparkPeople's numbers. So I'm kinda dubious there.

I'm in. I just got back from vacation on Sunday and recommitted to taking my nutrition seriously. Went to the store this morning and bought lots of healthy fruits, vegetables, lean chicken, beans, and lowfat dairy. I can already feel the difference--and I'm already losing the weight I put on when I was out of town.

Sounds great. I'm doing pretty wellwith tracking and taking out the processed foods. Now I am on a mission to bad any foods with hydrogenated oil of any kind from my house!

This month's challenge is easier. I use the term "easier" fluidly as we have more control over this. It's nutrition focused.
As much as feasible, we're eliminating processed foods. Incorporating more fruit and veggies. Sparkpeople generated meals make meeting the nutrition goals easier. We're making lifestyle changes. I lost 30+ pounds on nutrition alone. Nutrition is the central focus, so we're going to track our food for at least five days per week. If you feel like you're at that level, maintain the goals from the July challenge as well. I suggest that everyone maintain fitness activity, this will deliver results and we want results. Step this up a notch.

You may need to adjust the calorie limit as set by Sparkpeople if you choose to use the Harris-Benedict equation. What I like about the equation, it factors your activity level. I know the Sparkpeople calorie calculator does as well, but this one is a bit more interactive in that you can pose hypothetical weight goals and it shows the calorie intake needed to get there with or without activity.
If you're onboard, sign up!! If you have any questions or comments, feel free. And if you have a cool, healthy but yummy food, feel free to talk about what you ate each day. It's still about accountability. We can do this.
