"Dessert Without the Guilt"
Southern Living magazine, July 2006

The hot water bath helps insulate the custard from the direct heat of the oven and provides a more gentle environment for even baking.

Ingredients
1/2 cup sugar
2 egg yolks
1 large egg
1 (14-oz.) can fat-free sweetened condensed milk
1 (12-oz.) can evaporated fat-free milk
3 ounces 1/3-less-fat cream cheese, softened
1 tablespoon vanilla extract

A. Cook sugar in an 8-inch round cake pan (with 2-inch sides) over medium heat, shaking pan occasionally, 5 minutes or until sugar melts and turns light golden brown. Remove pan from heat, and let stand 5 minutes. (Sugar will harden.)

B. Process egg yolks and next 5 ingredients in a BLENDER until smooth. Pour mixture over caramelized sugar in pan. Cover mixture with aluminum foil.

C. Place cake pan in a broiler pan. Add hot water (150°) to pan to a depth of 2/3 inch.

D. Bake at 350° for 1 hour or until a knife inserted in center of custard comes out clean. Remove cake pan from water bath; cool completely on a wire rack. Cover and chill at least 3 hours.

E. Run a knife around edge of pan to loosen; invert onto a serving plate.

F. Tip: The 8-oz. blocks of 1/3-less-fat cream cheese have marks on the packaging noting 1 oz. measurements. By using these marks, it is easy to measure the 3 oz. of cream cheese that you need for this recipe.

Keeping some sugar free hard candies readily available in a kitchen candy jar and keeping some in my purse are my go-to remedy for a dessert craving.

Hope you are all doing well. Right now I am starting over. I'm worth this. My boyfriend is worth having someone healthy and so do my daughters. One step at a time. I CAN DO THIS!! WEEEE CAN DO THIS...One day at a time...one moment at a time if needed!!

I'm right there with ya! Ever since Easter I've been on a sugar kick! I moved my son's easter basket from the middle of the dining room table to a remote corner of the kitchen that I don't look at much and that has helped a little. Any excess I made my husband take to school with him to award his kids. That should minimize the candy laying around. Weekends are the worst though. I need to get back to reviewing what I'm going to eat at a restaurant and make sure it is within my calorie range! I really blew it big yesterday. Oh well. It is a learning process, yes? Small adjustments as we go.

Thank you so much. I needed that. I restarted today and going to do what I need to to stay on track. I was just SO frustrated with myself. I need to get on here more when I'm at home and not doing homework and if I wanna eat come to the website and uplift others :)

I went through this like you a lot, but you know you have to put all that happened in the past behind you and draw your future with faith in your self that you can do it and more determination to succeed .It doesn't matter if you fall a couple of times as long as you stand up again.
you'll find lots of motivational articles and awesome workout videos that can help you begin and continue your successful journey, and there's also lots of friends here are ready for your support, you're not alone in this.

First week SUCKED...first few days were fine then my birthday hit and ive been eating ever since...i am getting back to healthy eating tomorrow and just really annoyed at myself for falling off the wagon...I want to lose 15 lbs by June 1st and this wont happen if i keep this up :( emoticon
