CHEESY SCALLOPED POTATOES

2 cans Cream of Mushroom soup
1/2 c. milk
1/4 tsp. pepper
8 c. sliced potatoes
1 c. sliced onions
2 c. shredded Cheddar cheese
2 tsp. butter
Paprika

Alternate layers of potatoes, onions, and cheese in casserole dish.

Combine soup and milk and pour over potatoes.

Garnish with paprika.

Bake at 350 degrees; approximately 45 minutes, or until potatoes are cooked.

Feed between 10-12 people or more depending on how many other side dishes you are serving with your meal.

To make your dish lighter use light less fat soups and cheese...still a scrumptious dish to go with baked ham...

Below, you will find a scrumptious dinner salad..I had this same salad while a way on my vacation, it is scrumptious, Bon Appetite...

Green Quinoa Dinner Salad Serves 6

Ingredients

SALAD

2 cups / 12 oz / 340 gr cooked quinoa (youll need to cook a little over 1 cup of quinoa)

1 cup / 4.2 oz / 120 gr celery, diced

cup / 7 oz / 200 gr green olives, pitted and chopped

1 ripe avocado, diced

2 tablespoons fresh parsley, chopped

2 tablespoons fresh mint, chopped

DRESSING

Juice of 1 lemon

3 tablespoons olive oil

teaspoon fine grain sea salt

ground pepper to taste

teaspoon red pepper flakes (optional)

DIRECTIONS

Cook quinoa according to package instructions.

Allow to cool and fluff with a fork.

Place quinoa, celery, olives, avocado, parsley and mint in a salad bowl.

Whisk together the dressing ingredients (except the red pepper flakes).

Just before serving toss the quinoa mixture with the dressing.

Sprinkle with red pepper flakes (if using) and serve.

Chicken Nicoise Salad

What You Need

2 headsBoston lettuce, torn

1/2 lb. (225 g) boneless skinless chicken breasts, grilled, cut into strips

2 cups cut fresh green beans, steamed

1 lb. (450 g) new potatoes, quartered, cooked and cooled

2 cups tomato wedges

2 hard-cooked eggs, cut into wedges

1/4 cup sliced black olives

1/2 cupKraft Calorie-Wise Zesty Italian Dressing

Make It

PLACE lettuce in large bowl.

ADD all remaining ingredients except dressing; mix lightly.

DRIZZLE with dressing; toss to coat.

Lemon Square Recipe

Let cool in the fridge over night so that the graham crackers soften

- Line a 8x11 pan with graham wafer crackers
- Prepare 2 envelopes of your favorite lemon pie fillings - I use Shirriff
- Pour one half of the lemon filling on top of the graham wafer crackers
lining the 8x11 pan.
- Top this lemon layer with another layer of graham wafer crackers
- Pour the last half of the lemon filling on top of the 2nd layer of graham
wafer crackers
- Top the 2nd lemon layer with another layer of graham wafer crackers

The layers are like this in the cake pan:

icing topping
3rd Wafer layer
2nd layer of lemon filling
2nd wafer layer
1st layer of lemon filling
1st wafer layer

Icing recipe:

8 oz of cream cheese
4 Cups of cool whip
1 Cup of Icing sugar
This icing recipe may have to be cut in half

OR
Top with whipping cream

OR
vanilla cake icing

Ingredients

Filling:

2 cups flour
1 1/4 teaspoon pumpkin pie spice
2 teaspoon baking powder
1 teaspoon baking soda
1 cup sugar
1/3 cup light butter/margerine, softened
1/2 cup brown sugar
2 eggs
2 large egg whites
1 can (15 oz.) pumpkin pie filling
1 cup carrot, finely shredded

Cream cheese topping:

4 oz light cream cheese, softened
1/4 cup sugar
1 tablespoon skim milk


Directions

Pre-heat oven to 350. Grease 15 x 10 jellyroll pan.

Prepare Filling:
In small bowl: combine flour, pumpkin spice, baking powder & baking soda.

In larger bowl: Beat sugar, butter and brown sugar until crumbly. Add eggs, egg whites, pumpkin pie mix and carrots. Beat until well blended. Add flour mixture and mix until well blended. Spread onto greased pan.

Prepare Cream Cheese topping:
Mix together cream cheese, sugar and milk until thoroughly blended.

Drop teaspoon-fulls of topping over pumpkin batter and swirl mixture with a butter knife.

Bake for 25-30 minutes or until cake tester (inserted in center) comes out clean. Cool in pan completely on wire rack before cutting into squares.

Makes 24 squares.

Directions

In a blender, combine 1 pound frozen peach slices (about 2 cups), 1 1/2 cups tangerine or orange sections (peeled and pitted), 2 cups carrot juice (such as Bolthouse Farms), 2 cups orange-tangerine juice and 2 teaspoons grated fresh ginger. Blend until smooth. Makes 6 servings

Have you tried stir-fries, they are a better way of cooking, you can stir-fry spinach, small cut up pieces of meat-chicken, beef and or fish, bok-choy, potatoes, mushrooms, peppers, onions, pretty much any veggie can be cut up in chunks and stir fried, once cooked it can be served on a bed of rice or noodles, a healthy supper or lunch and easy to prepare. All you need is a good on the stove wok, cooking spray instead of using oil or butter, a better and much healthier way of cooking without fat, this way you don't add any fat to your cooking...A variety of spices, fresh or in a package, garlic and presto, a scrumptious healthy meal... emoticon

Here is a scrumptious mac & cheese casserole for just about any gatherings, it is both delicious & nutritious and the added bonus it is low in calories.

**Old Fashioned Mac & Cheese**
Best Casserole for Family and Church Suppers

What You Need

1 pkg. (7-1/4 oz.) KRAFT Macaroni & Cheese Dinner

1/4 cup milk

1 can (14-1/2 oz.) diced tomatoes, drained

cup KRAFT Zesty Italian Dressing

2 Tbsp. butter, melted

20 RITZ Crackers, crushed (about 1 cup)

Make It
HEAT oven to 375F.

ADD Macaroni to large saucepan boiling water; cook 6 min. or until tender. Drain. Stir in milk and Cheese Sauce Mix. I combine the Mac & Cheese mixture with the tomato and dressing mixture then top casserole with crackers and melted butter.

POUR into greased 8-inch square baking dish. Mix tomatoes and dressing. Top macaroni mixture with tomato mixture.

Drizzle butter over cracker crumbs; toss with fork. Sprinkle over tomatoes.

BAKE 15 min. or until heated through and crumbs are golden.

Strawberry-Yogurt Breakfast Smoothie

8 large strawberries
1/2 cup yogurt-plain or strawberry flavor ( I use strawberry)
1/2 cup of your favorite juice ( I often use orange or a blend of orange-peach-mango)
4 to 6 ice cubes
Ingredients can be adjusted to your taste, i.e. and how thick you want your smoothie...

Handful of fresh or frozen strawberries

splash of orange juice

Blend in a Blender, Food Processor or a "Magic Bullet" if you have.. "this is what I use"

Choco-Berry Protein Smoothie Meal Replacement ( great Breakfast on the run)

What You Need

1 Tbsp. lemon juice

7 pkts. (0.8 g each) Sweet'N Low Low Calorie Sweetener

Make It

COMBINE ingredients. Let stand 30 min., stirring occasionally.

POUR into clean jars or plastic containers; cover with tight-fitting lids.

I was reading a SP Article and found this recipe`, looks pretty good to me, so here you are, another great recipe for yourself and your kiddos, enjoy..


Tuna and Coleslaw Wrap Serves 4

1 can (6 ounces) tuna, drained
1-1/2 cups shredded cabbage
1/2 cup crushed pineapple, drained
1/4 cup reduced-fat coleslaw dressing
4 (8-inch diameter) whole wheat tortillas

In a bowl, add the tuna, cabbage, pineapple, and dressing. Stir to mix evenly. Top each tortilla with one-fourth of the mixture. Fold both sides of tortilla up over the filling and roll to close.

Broccoli Salad by Kraft Recipes

What You Need

1/2 cup Miracle Whip Dressing (Use Light), cuts down fat content. see Kitchen Tips below

1/2 cup sugar

2 Tbsp.white vinegar

12 cups broccoli florets

1 small red onion, finely chopped

1/2 cup raisins

1/4 cup sunflower kernels

5 slices bacon, cooked, crumbled

Make It

MIX dressing, sugar and vinegar.

COMBINE broccoli, onions, raisins and sunflower kernels in large bowl. Add dressing mixture; toss to coat.

REFRIGERATE several hours. Sprinkle with bacon before serving.

RED RASPBERRY MUFFINS

1/4 c. shortening
1/2 c. sugar
2 eggs, beaten
2 c. flour
4 tsp. baking powder
1 tsp. salt
2/3 c. milk (I use non-fat milk)

1 1/2 c. fresh raspberries, or well drained frozen berries

Cream shortening and sugar; add eggs.

Mix dry ingredients, gently stir in berries.

Bake at 400 degrees for 20 minutes. Makes 18 muffins.

I sprinkle a little sugar on top before baking - it gives it a nice topping.

Veggie Casserole, a family favorite for several years...


Base

1 medium cooked cauliflower & broccoli
(place cooked veggies in greased baking dish)

1 can mushroom soup
2 tbsp mayonnaise
cup cheddar cheese
(combine these 3 ingredients and pour over vegetables)


Topping

cup corn flake crumbs
2 tbsp. butter
cup parmesan cheese
(mix corn flakes and parmesan together. Sprinkle over everything else, then melt butter and pour over all.

Bake at 350 for hour.

Blackberry Muffins, submitted by Theresa, my Friend's recipe`

Prep: 15 min, Cook: 25 min.

12 servings

2 cups all purpose flour
1 Tbsp. baking powder
1/2 tsp. salt (necessary)
1/2 cup sugar
1 egg, lightly beaten
1/2 cup lowfat milk
1/4 cup unsalted butter, melted
1 cup blackberries

Preheat oven to 375F. Butter 12 muffin tins or line
with paper muffin liners. Set aside 1/4 cup flour.
Combine remaining flour, baking powder, salt and sugar
in a mixing bowl. Stir in remaining ingredients, except
berries, just enough to dampen flour. Do not overmix.
Mixture should be lumpy. Sprinkle reserved flour over
berries and gently stir into batter. Fill each muffin
tin 2/3 full. Bake 25 minutes or until tester comes
out clean when inserted in center.

Salmon with Summer Tomato Salsa

great, easy recipe

INGREDIENTS
4 (4 ounce) fillets salmon, skin removed
1 cup chopped fresh tomato
1/2 Hass avocado, chopped
1 garlic clove, crushed
1 Tbsp balsamic vinegar
1 tsp olive oil
1/2 cup cooked corn kernels
1/4 cup minced red onion
1/4 cup chopped fresh cilantro
salt and pepper, to taste
1 lime, cut in wedges

DIRECTIONS
1. Preheat oven to 325 degrees.

2. Combine all ingredients (except salmon fillets and lime) in small bowl and refrigerate for 30 minutes.

3. Bake salmon for 15-20 minutes, or until cooked thoroughly.

4. Serve salmon surrounded by the salsa and lime wedges.

Can serve salmon either hot or cool --

Serving cool salmon with salsa is a great summer recipe; just refrigerate until cool


**makes 4 4-oz fillets

Blueberry Streusel Muffins

1 cup milk
1/4 cup vegetable oil
1/2 teaspoon vanilla
1 egg
2 cups all-purpose flour
1/3 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 cup fresh blueberries or 3/4 cup frozen (thawed and drained)

Heat oven to 400. Prepare streusel topping (listed below). Grease the bottoms of 12 medium muffin cups or insert paper muffin cups. Beat milk, oil, vanilla, and egg. Stir in flour, sugar, baking powder, and salt and mix just until flour is moist. Batter will be lumpy. Fold in blueberries. Divide evenly among muffin cups. Sprinkle with 2 teaspoons of the streusel topping and bake 20 - 25 minutes until golden brown. Makes 12 muffins.

Streusel Topping
1/4 cup all purpose flour
2 tablespoons packed brown sugar
2 tablespoons firm butter or margarine1/4 teaspoon ground cinnamon

Mix all ingredients until crumbly.

To make lighter recipe` use skim milk and light margarine or unsalted butter etc...
