Enjoying getting more of our fruits and veggies in smoothies.

Tonight, I made a strawberry smoothie. Frozen strawberries, a bit of celery and kale, and plain greek yogurt, plus a little honey, added water with a little bit of evaporated milk; vanilla protein powder, maca powder, and a few more dashes of this and that. So good. I can taste the strawberries!

Just recently we started using a Nutribullet extractor/high-speed blender, and so glad we are.

Today I mixed kale, dandelion greens, a bit of onion, one avocado, celery, and mung sprouts. Plus protein powder, maca powder, a few spices, a little flaxseed oil, dash of liquid aminos; plus WATER, and a splash of milk. The avocado makes it so creamy!

Had an omelet this morning with one tomato and 1/2 avocado, cooked in olive oil. Really stuck with me through the morning. For lunch had a bowl of chili (more tomato) and a side salad with no croutons.

like carrots and green peas. There are a number f veggies I am not fond of. I never liked them when growing up but I keep carrots in the fridge and green peas in the freezer. I am sure we use a pound of carrots every week or so. I put them in a lot of my dishes. Soups, stews, roast et I will add a cup of green peas to my pot pies, soups, stews etc. In the spring ii love sauted fresh green peas straight from the pod. I love throwing a few carrots in the pan when I am roasting veggies This makes them sweet and tastey

Jumpup, trying veggies you don't care for every now and again pays off. I learned to like almost every veggie that way. I just taste it when it is offered and after awhile found I liked most of them and loved some I used to dislike strongly. I also try different ways of preparing them. I have a great recipe for roasted brussel sprouts with a Balsamic reduction, my family loves it.

I am trying hard to keep veggies top of mind! I have been trying to drink a small can of V-8, although I skipped a couple days.

Plus, I bought a small-ish spaghetti squash to try again. I tried it once about a million years ago and was not terribly impressed. Well, I've grown up since then. Time to try it again. Roasted it, seeded it, shredded it and sauteed it in some olive oil with a little garlic. Yep. I've grown up. Got 3 meals out of it and will do it again soon. Had some pieces of roasted chicken with it.

Right now I am craving a butternut squash! Lucky me! They are in season!!

I haven't been consistent with my veg, but I do always get one fruit in at breakfast. So. My goal will be 2 veg and 2 fruit DAILY (or more). Cant really start it til the 5th though, fridge is kind of bare and Saturday is shopping day. I'll do what I can, LOL!

This is good! I need a food challenge!

I'll check in here as often as it pops up. (now to find my notebook to start logging....)

We try to eat at least 4 fruits a day and 6 veggies. We are researching and trying new items each week I have three new ruits I found t the farmers market and looking up to see how to eat or prepare

Post here to keep us updated on your fruit and veggie challenge. Remember we are trying to add at least one fruit and one veggie a day to our totals. So if you eat 1 fruit or veggie a day, you are trying to eat 3 now. If you eat 5 lets up that to 7! If you already eat a bunch then try adding something totally new each week.

Be sure and post at least once a week to keep the team updated!
