Fabulous Fall Salads

As the trees begin to change color, I'm reminded of so many dishes I love to cook. Fall is a busy time with back-to-school, sports, and after-school activities. To maintain a healthy rhythm, I turn to soups and salads that are quick and nutritious. Start with seasonal dark green leafy veggies at your local grocer or farmer's market. Create a base of arugula, lettuce, and/or kale, and top it off with peppers, corn, beets, and cucumbers. Mix in fresh herbs like basil, cilantro, and parsley to taste. Don't forget a splash of sweetness with apples pears, figs, and grapes. You can also add protein and crunch with pumpkin seeds, sunflower seeds, nuts, fish, boiled egg, and beans. Butternut squash is my favorite! I love making half sweet with cinnamon and sprinkle of sugar and the other half savory with curry seasoning. Report
For lunch yesterday, I had a salad of leftover turkey (this is Thanksgiving weekend here in Canada), pear, celery, shredded carrot and dried cranberries, with a spoonful of light mayo and a slice of toasted homemade multigrain bread on the side. Unbelievably delicious and only 400 calories. Report

Cabbage and carrots shredded with mild onions and sweet peppers lightly seasoned with low fat honey mustard dressing or low cal. italian. Report
These sound great! My favorite salad extra is flat-leaf parsley. It packs a huge amount of flavor. I usually top mixed greens with tuna, cucumber, tomato, peppers, broccoli, asparagus (blanched), and a handful of sunflower seeds. Nothing too terribly out of the ordinary, but it covers a lot of micro-nutrients. Report

I am into veggies for my salads but not so much the fruits. I'd much rather have them on the side! Report
Anything fresh and in season as far as vegetables go not a huge fan of putting raisins etc into salads - gross. If I want a FRUIT salad I will have one for desert. Report
