    I love this question! I got it asked a lot and it is always good to present my answer to others: I try to stand back from giving a clear cut judgement(that is yours to do!) and present you with facts. These are the vegan reasons to refuse dairy and eggs:

    -eggs: eggs are today factory farmed, for financial reasons. Hens are kept in wire cages, stacked one above the other. Since space must be economized to the max, the number of hens per cage is so high that hens fight with each other to the point of killing their cage mates in order to acquire the biggest living space possible. Once again to maximize profit, hens are subjected to a process that prevent the in cage killing: this process is called de-beaking and it consists of slacing off the beak of the animals with a hot blade. This process is painful. Also, since cages are stacked, and the hens are never taken out during their life time, the escrement from one cage falls on the one below, granting very poor living conditions for these animals. The situation is so stressful that hens keep trying to free themselves: animals died with their neck broken in the wire and others blinded/badly wounded by escape attemps are often happenings.
    Vegans argue that this situation is not ethically acceptable, hence the refusal of eggs.
    -milk derivatives: milk is the common name given to cow milk. Cows, as humans do, produce milk to feed their children. When the calf stops having milk, cows, as women, stop producing it. However, this natural cycle has ben distorted into this situation. Cows are artificially impregnated continuously since they become fertile, in order for the cow to keep producing milk. Not only: as soon as the calf is just few days old, the cow is made pregnant again, to avoid waiting times. A cow who is pregnant continously suffers from a number of sicknesses and health problems and when she is 5 years old, she is sent to the slaughter house, much before the due time in normal conditions (a standard cow lives many more years). Also, since the milk must be used for humans consumption, it cannot be given to the calfs, which are the second product of the dairy industry. Calfs are taken away from their mother when they are just few days old and to provide the typical white meat we know, they are raised in total darkness with a mixture of 50% water and 50% milk and recieve less food and nutrients their mother would have provided them with. Calfs are actually underdeveloped animals. The vast maioriy of the milk is
    therefore collected for human consumption. Both cows and calfs live a static life: they are as well factory farmed. They live indoors all their life, in stals where they cannot move and that causes cows severe legs injuiries. The cow udders are not milked by hand: they are permanently attached to a machine. Cows are not fed grass but a mix of byproducts of the crop and meat industry (it is not uncommon that animals are fed with powdered bones of their own specie, coming from already slaughteres animals).

    To summarize all of the above in few words, vegans refuse eggs and dairy because their productions comes with an ethical price that is paid by those same animals they, as vegetarians, committed not to harm. Hence the step further and the avoidance of dairy and eggs.
