After my Dr's appointment, I realised I'd put on weight again and am the heaviest I've been in years. Sigh.
Not being able to exercise properly is getting me down but I've gotta try. So today is Day 1. 16:8 and 10 mins walk minimum. And hopefully healthier eating too.Running out of veggies and slight sense of panic kicking in. Lol! Managed to heat up some rotisserie chicken and have some beets and corn. Resistance is futile for my hot sauce though... Day 2. Might have to make a groceries run tomorrow. No veggies is a state of emergencyDinner is leftover sushi. Before anyone keels over in shock and horror, it's OK if you freeze it and then pop it in the air fryer with a little sesame oil, cheese and kimchi chives and Bob's your uncle!Am feeling sluggish and slightly unwell these two days so struggled to find something vaguely healthy to eat.
Unearthed a pot of pate someone had given me and made myself some toast and tea. Perhaps I can psych myself to waddling to the shops later.
Oh woe is me who has no more fruits and precious little veggies after this meal...I find myself obsessed today with figuring out where I'd fecked up in my knitting such that I forgot to cook.
Le sigh. So dinner is a slapped together affair of pate and toast with some celery sticks, cardamom tea and grapes.
I will have to sort meself out properly tomorrow and do some cooking!
On a side note, am terribly pleased with the new bowl I bought yesterday. Having my food on nice stuff makes me eat happy! Some evil person sparked a massive and persistent craving for steak a couple of days ago.
Today, I finally succumbed and set the ole air fryer into overdrive. Miso grilled lamb cutlet and a wee wagyu steak, sweet potato fries, roasted veggies, red cabbage miso salad and grapes for dessert.
Will definitely need a long walk after dinner.
On a positive note, I noticed my pants are looser. Hopefully it's not because I have been incompetent in laundry again...Ehrm, Netflix knows something we don't?
I am assuming that that particular episode might be entitled Folding Private Kondo?Had a whole seabass in the freezer. So it's Friday and I decided to set it free. Into my tum tum.
Loaded the fishy fellow with Thai seasoning, basil pesto ratatouille of sorts, lemon juice and chucked it in the oven.
The result is fairly tasty although I was a little too light handed with the seasonings this time. Oh well, at least it's healthy. Now to devour it post haste so I can watch a movie after!
Have a fab weekend all! When you suddenly develop a craving for soup dumplings...
This happens. When you attempt to make your instant ramen healthy by adding tonnes of spinach, goji berries, a bit of salmon and an egg. Weakly adds, the instant ramen is a no msg one...The trick to eating out is to always try to have a hungry young person sit next to you. They inevitably share and end up eating most of your food.
There is a young man at work who always sits to me during meals. Someone jokingly called me a cougar and I scoffed and said it was more cupboard love. Lol.
But at least I get to eat lamb chops and fries without feeling guilty. So bless the young boy.Couple of days ago, I read a food blog which mentioned the bloggers love for a peanut butter strawberry and basil toast for brekkie.
Ever so intrigued I tried it today. Holy Batman, why did I not know this sorcery before? It was sooooo good! I had it on my fave pumpkin and pumpkin seed bun with a cup of cardamom tea and it was the most fabulous combination!
And healthy too!Spent the day knitting so my wrist and hands are aching. Was terribly tempted to get some takeout but it's so unhealthy compared to cooking at home so I just gritted me teeth and got to it.
A tiny wagyu steak marinated in Thai spices, a wee half cup of rice and vegetable Japanese curry for dinner.
Now to nurse my hands with a cuppa and watch a movie. Wondering if I should attempt a wee Tardis marathon... Hope you all are having a fab day!I love pizza but can't have it too often. Yonks ago I discovered my fave frozen pizza and it's been a freezer staple since.
Dr Oetker Ristorante spinach mozzarella pizza is phenomenal. I throw in some pine nuts and sprinkle some tabasco green pepper sauce and a quick easy meal is ready.
And it's only about 220 cal for a 1/4 slice. I am drinking my choccie oat milk happily as I watch telly.Back from the hospital and happily made a golden cauliflower fried rice. Ahhh, what a treat after hospital food. Keeping to a diet plan is also quite impossible when in hospital. Try telling the nurse you don't want any food after 7pm. Definition of eye rolling.Obviously not fully recovered as I totally concussed at 8pm last night and woke up a mass of where am I, who am I, what space time continuum am I in...
So lieu of a magic screwdriver, I made meself some peanut butter toast, poured out some dark choccie almond milk and chomped on the cutest tiny tangerines from my neighbour.
Must say this new fig walnut bread my local bakery just launched is ever so yummy. I must restrain myself... Am partial to figs in generalI am trying to use up all the Asian veggies in my fridge so did a lotus root, gingko, carrot, mushrooms, broccoli and pork stir fry. Also grilled up a tiny wagyu steak and had it all with some rice.
After this Imma gonna tackle some knitting. With a nice cuppa. Have a brilliant day all!Am gonna take a wee nap before the match tonight. Will be the only odd person drinking tea at the local amongst the beer chuggers.
Will cannily try to disguise my anti-ManU tendencies. Hopefully my acting will be better than these three.I'd already had a peanut butter toast when my neighbour popped by. I'd asked that she help me buy some organic eggs when she was at the shops today and she'd brought them by.
And also some spring rolls. I don't know which establishment she gets them from but they are fantastic.
So even though I'd already had brekkie, I tucked into these with gusto.
Guess it's fruits and a salad for lunch😛Because lunch was so massive, I only had a bowl of bone broth as I was still so full.
Then I rewarded myself with my cookie and some fruit and my cardamom tea. Now onto some knitting. I think I am figuring out how this goes...
Love it when my biggest decision today is whether to hit the shops tonight or tomorrow to replenish the groceries. Lol, definitely not one to dictate world peace, am I?You know the weekend's here when you are eating the last of the leftovers and veggies.
The mayak eggs, chicken rice were served with a fresh serving of broccoli sautéed with mushrooms and onions.
Time to hit the shops as I'm out of stuff. Here's how I eat my sushi...with kimchi. Lol, I bet I've just managed to offend both the Japanese and Koreans now.
I didn't quite get to eat today so this may be my one and only meal today. Which is bad so Imma gonna get my bone broth out for later.
Sigh today was such a hectic day.A friend asked me how I knew I was losing weight. When I don't own a weighing machine, other than my kitchen scales.
I know through my clothes. Stuff that were tight before are now comfy. I weigh myself at the Dr's since I'm there so often and they have the fancy schmancy machines.
Like the leggings I was wearing actually had give at the knees now instead of making me look like the Michelin man.
So she took a piccie of my leggings. She's odd like that. This is my version of fish and chips I guess. I marinated some mackeral in the leftover marinade from the mayak eggs and grilled them. Air fried some sweet potato fries and steamed veggies with rosemary and lunch was ready.
Need a long walk after this...Feeling the onset of being under the weather so took it easy with a simple lunch.
It's marmalade day today. Made a grilled ham and cheese with pesto, smeared with a little organic onion marmalade and also a butter and thick cut marmalade toast for "dessert". Paired with my hazelnut cinnamon mocha and some strawberries, it's a satisfying and simple meal.
I just need to trundle up and rest to ward off whatever's trying to creep up on me. 🙅♂️Work it, work it...Went to bed early but just couldn't sleep. Sigh. Might as well knit...Felt too knackered to cook so I dragged out some leftover rice and veggies, topped with an egg and had some yummy strawberries after. With a nice cuppa cardamom tea.
I'm so glad I got some Korean strawberries at the food fair. They taste different from normal strawberries. Much sweeter. Wish I'd bought more now.I've had to eat quite a bit of red meat recently and it's beginning to take its toll.
I'm not sure if it's psychological but I've been feeling really heavy and stuffed up and losing my appetite since enforcing the red meat intake.
Today I just couldn't do it anymore so this was dinner. Just fruits. Maybe some tea after but I can't handle any more meat right now.
Sigh.Made another faux ramen meal using enoki, roast duck, sugar snap peas, red cabbage, broccoli stems and kimchi. Added the kimchi juice to the chicken broth so it's piquant and slightly spicy.
At this rate I may even be able to squeeze in a naughty dessert! 😬🍰My favouritest snack in the whole wide world... Pomegranate! I can inhale cupful of arils at a go. The only thing that slows me down is how fussy it is to get them all out. Nom nom nom...Almost forgot I had a movie to go to tonight so I decided to have a uber early dinner.
Green curry duck from some leftover roast duck, a salad of red cabbage, carrots and pine nuts drizzled with roasted sesame dressing with a small teacup of cardamom infused rice.
Need to go hit the shops as I am desperately short on veggies now. Panic attack incoming...Made meself a veggie bowl. Ok, it had about a 2 tbsp of minced pork I keeping with my have to consume red meat orders.
Red cabbage, red peppers, baby corn, carrots, broccoli, the holy trinity of onions, garlic and ginger, all mixed with a little green curry paste and Thai spice seasoning. Crunchy and fresh, just the way I like it.
Now I can tackle Block 2 of my crochet without a growly tummy.Am extremely knackered today so whipped up an uber simple and fast meal if cucumber noodles and salmon in ginger, roasted miso sauce.
Took about 10 mins to cook - the cutting up of the cucumber took the longest time... Lol.
I might have a wee nap and hope I can wake up to watch the Barcelona game later. My brekkie. Vegetables samosa, cardamom tea and a tangerine.
Love the samosa from this Indian vegetarian shop because it's fresh made and chock-full of spices. They only make them in the late arvo and are sold out by supper. You can taste all the cumin seeds and coriander, which just makes me happy.
Happy weekend all!Made me some congee from leftovers. Leftover roast duck, leftover glutinous corn (which was not very nice), broccoli, cucumbers, carrots, baby corn, pine nuts, spiced with 5 spice, cardamom and drizzled with a little sesame oil.
It was delish as I added cucumber garnish for extra crunch. Not sure why I keep craving cucumbers recently. Just keep wanting that fresh, juicy crunch.
Wanna take a walk to the shops later. Need leafy greens...My brekkie of toasted pumpkin bun with spicy sweet meat, gouda, onion marmalade and cucumbers. Paired with Thai milk tea and a tangerine, I am ready to tackle some crocheting. The last of my strawberries were looking very sad and I was loathed to toss them away as they were right pricey. So I macerated them in a little balsamic vinegar and honey and made them into strawberry compote. Ready for a right spreading on me toast in the morning.
Zero food waste tonight.I was hoping to sleep in today but of course, I get a scammer call at 6am. Seriously, these scammers don't sleep!???
Disgruntled, I made myself a nice brekkie. Pumpkin bun toasted and spreaded with hazelnut honey, slathered with butter and topped with the strawberry compote I made last night from expiring Korean strawberries.
I must go get more even if they cost more than normal strawberries. There must be something special about Korean soil as these strawberries are uber yummy.Muggy day so I decided to take out the leftover congee from the freezer and resuscitate it into a rice soup.
Added a little more leftover roast duck and loads more broccoli. Throat's been feeling rather dry and scratchy so this hit the spot.Grilled a little wagyu with Thai seasoning, made a veggie bowl of carrot noodles, kale, red cabbage, baby corn, red onions, pumpkin and sunflower seeds, all drizzled with roasted sesame dressing.
I have a little potato samosa on the ready in case this is not enough but I have a feeling it is. 😊The last of my leftover congee got a refresh with some salmon belly and a dash of Thai spice seasoning.
Managed to complete all of Block 4 with much effort and got started on Block 5. I love Block 5! I seem to like all the flower blocks more, which gives me a good guideline moving forward.
Will get a bit of yoga in later as my posture when crocheting leaves much to be desired. Picture Gollum spotting the one true ring...🤣😂Made a burger out of the pumpkin bun, gouda, spicy sweet meat, a baked egg, veggies and onion marmalade. Sipping my Thai milk tea as I ponder if I should celebrate Easter by baking some choccie muffins. My 1st bake since embarking on this diet plan. Am nervous...I wore a pair of pants I've not managed to get into for almost 2 years tonight. I could barely get it past my thighs and trying to button it would be a challenge even the Hulk would fail at.
And now they fit. Happy dance! 💃🕺🎉Have not been diligent about consuming red meat these past two days so made a grilled wagyu flank steak seasoned with Thai herb seasoning and 5 spice. Had it with a veggie bowl of broccoli, kale, carrots, baby corn, peppers, cucumbers, pine nuts with a tiny bit of leftover egg fried.
Was simply yummy and feeling like I can face my Dr the next blood test😂😛My last pumpkin bun done two ways. Toasted with gouda, spicy sweet meat and some kimchi cucumbers I made yesterday. Followed by the "dessert" version which is simply hazelnut honey with thick slabs of butter. Served with my hazelnut cinnamon mocha.
Have to hit the shops later. Seriously short of veggies and fruits. And bread. SighWent into town for a walkabout and saw a Malaysian mini food fair. So I bought a prawn noodles bowl.
To my surprise there was only one prawn in the entire concoction with a lot more fish cake and pork than prawns. Perhaps they mean the broth which was stunning. Definitely prawn fully rich.
There was zero veggies in it so I added some Japanese chrysanthemum leaves I got from the Japan markt. So pricey but oh so yummy. I think it may be my favouritest veggie in the whole wide world.Am gonna go to a friend's house for an Avengers movie marathon tonight so am eating my last meal early. Am bringing my water bottle of unsweetened green tea over so I can avoid all the temptations that are likely to be there.
Grilled a wagyu steak and air fried some sweet potato fries in Thai spice seasoning. Reheated the veggie bowl leftovers and munched on some strawberries. And that was that. Red meat intake ticked. What do alkies and yogis have in common? Hic... Ommm...Took a long walkie today and brought my bear with me. Stuffed him with green tea and had to defend him against the advances of a young hussy (the cutest 3 year old chickie at the park).
Offered to let her drink a sip of the green tea after she threw a hussy fit that she wanted to drink from him too... Her face! Priceless!
Felt like Maleficent. May have scarred a young un for life now. Singlehandedly brought down the green tea industry.Made a batch of mini sweet potato and peppers fritatta. Grilled some spicy gochujang pork belly and made a salad of Japanese chrysanthemum leaves with pomegranates, pumpkins and sunflower seeds and pine nuts drizzled with roasted sesame dressing.Starting a new day with a cuppa and sammich. Made open face sammiches with orange peel and walnut bread, smeared with hazelnut honey, layered with spicy sweet meat, brie and figs. Next time I'll add some pumpkin seeds. Gives it more dimension and texture. Thai milk tea to round it all up.Today's red meat intake. Grilled wagyu with lemongrass and Thai spices. Roasted pumpkin, broccoli, sugar snap peas, peppers and pine nuts. Am gonna have an ice cream after becos I've been very good this week 😋I think my defense mechanism against pain is sleep. I slept 10 hours today but the upside is that my back is much better now.
But my tummy is pissed off. So I got busy reheating leftovers for my one meal today before cut off time.
Luckily I have lots. Leftover Chinese herbal soup and shungiku rice from yesterday and leftover lemongrass roasted veggies with an egg throw in.
I may even have half a double chocolate muffin after just because...One of the good things about going to the hospital is that there is a lot of good food near it.
I always buy my meals before returning home and today I got some spicy seafood noodles. Boy, this was spicy! I needed a cool lemonade to calm my tastebuds.
I need a wee rest after this as they stuck needles into me again and put me on some woo woo meds. Am gonna visit some pink elephants soon! Woo hoo! 😂Am recovering from the flu so appetite is still slightly lagging. Made a small sweet potato with spicy sweet meat and brie with Thai milk tea. Bringing a small tub of yoghurt in case I get peckish later. My full on brekkie today because I only had a muffin for dinner last night and woke up right famished.
Citrus walnut bread toasted with spicy sweet meat, brie, onion marmalade and figs. Came to the knobbly end bit of my bread so slathered that with some raw honey and butter. Washed down with Thai milk tea and grapes.
Am ready to take on a long walk around the park now! Stagger, wobble, limp off...A good night's sleep is highly underrated. I feel so much better this morning so I got cracking making a simple brekkie.
Toasted wholegrain beetroot bread slathered with honey almond spread and butter, honey yoghurt with pumpkin and sunflower seeds and a fig. Brewed my hazelnut cinnamon mocha and finished it all off with grapes. Ready to face the day! 💪Am going to a friend's home for movie night so gotta eat fast and start today's IF cut off time early. Bringing my sachets of tea with me just in case they don't have plain tea... You never know.
See how much leftover of last night's rice is left? It's tremendously delish with huge chunks of lamb in it. I made a veggie curry to go with it.Woke late this morning all groggy and confused. Too old for late nights I guess. So brekkie was uber simple. Any simpler I'd be peeling a banana and calling that brekkie.
Toasted wholegrain beetroot bread with honey almond spread and butter, sprinkled with pumpkin and sunflower seeds. And my ubiquitous hazelnut cinnamon mocha and grapes.
Still groggy. Itsa gonna be a sloth day. Stumble, mumble and fumble...Am beginning to think this rice really can feed the multitudes... Never ending!
Grilled some wagyu with Thai spices, steamed some veggies in miso sauce, reheated the rice and dinner was ready in a flash.
Need to hit the shops again. Running low on veggies and fruit. And worse still, have no cheese left at all! Danger, danger, Will Robinson...Finally, I manged to see the end of the delicious Arabic rice my friends gave me. It was phenomenal but after 4 days of eating it, I'm ready for something different.
So I used the last of the rice in a bowl Imma gonna call Donald's Last Dalliance. Leftover roast duck with the rice, tossed with carrots, red cabbage, mangetout, mushrooms and pine nuts. The one thing I always try to keep stock of is kimchi. When the stock runs low I start to panic.
My stock is running low. Cue Jaws theme song.
I had a craving for chicken rice today so I got some and was going to have it with kimchi when I realised I was down to just a few leaves. 😱
So I made a super quick cucumber kimchi with the brine and made a note to run to my fave shop in town tomorrow.Time to close the kitchen as my IF cut off time draws near.
Made a simple dinner with my beloved beetroot bread, mushrooms in red wine cheese sauce and steamed mangetout.
I have not made this mushroom sauce in a long time. Forgot how good it is. And how bad for the waistline. Have to go for a long walk after this. One good thing about crocheting (or knitting for that matter) is that you ain't got no time or hands to go eating stuff!
Especially when you are struggling with conundrums like colour choices.
I am torn. The light gray or the gun metal gray. Trying to envision the blankie on either colour. This is doing my head in.
I think I need a cuppa as I ponder this.Had another fainting spell again so it's red meat time. Grilled a wagyu steak with herbs, mustard and onion marmalade topped with ricotta. Oven baked some veggies in lemon herbs and made a ricotta beetroot salad.
Wanted to catch a movie tonight but have a slight phobia that I might faint again. But I do not want to let this to stop me from living life so am conserving energy now.
Fingers crossed.Staying in to do some reading. So made a quick, easy instant ramen. Leftover roast duck, kale, goji and an egg in tomyum broth. It needed some extra heat so I dotted some garlic chilli sauce on top. This sauce is amazeballs. Got it at a food fair last year from some of the loveliest Hong Kong ladies. They were right pleased when they found out I'd lived there before and miss the food terribly. Gave me extra discounts. Yay! Hurrah for suck ups!Got bored of reading so switched things up by doing a little crocheting.
This is bad. As I get more familiar with crocheting, I've learnt how to eat and crochet at the same time. Damn it. Damn you, multitasking gene!
Luckily, I only consumed a mini jackfruit tart, which is awesomely delish, and a kiwi with a cuppa Thai milk tea.
Must not fall back into snacking though. I still have almost 2 kg to lose. I must resist! I must resist! 😧Brekkie to cheer myself up. Savoury toast of beetroot bread, ricotta, Thai spices, spicy sweet meat, onion marmalade and figs. Dessert toast of toasted beetroot bread, ricotta, honey almond spread, cinnamon sugar and grilled kiwi. Thai milk tea, red kiwi and pomegranates.
It's Vesak Day so am wishing peace, hope and forgiveness to all.My neighbour gave me a packet of instant abalone noodles all the way from Malaysia.
I gave it a go today. It was a bit salty although quite tasty. Am not terribly fond of the abalone as they were rather chewy and tasteless but the noodles were nice and springy.
Luckily I'd tossed loads of cucumbers, goji and an egg so it wasn't just noodles in a nice broth.
However I'm fairly sure there's quite a bit of msg in it. Sigh. Time for lots of tea and water to cleanse my system.Feeling a little slow and sluggish today so did a "power meal" in the hopes of getting more energy and oomph.
Roasted salmon and sweet potatoes in roasted sesame sauce, made a kale, the roasted sweet potatoes, pomegranates and pine nuts salad in Thai spices and thyme dressing, topped it all with a little ricotta.
After this I might even be able to have a dessert! 🍰😍I'm not sure why I'm running low on veggies so quickly this week but I've to hit the shops again.
Made some comfort food in the meantime. Childhood staple every time I was in a hurry. Baked beans, leftover rice and egg.
Definitely will send some people into horrified mumbling but it's really just a cup and a half and I eat this like once a year. 💊Well, this is the last of my veggies, sans a few sticks of carrots.
Grilled a slab of spicy Korean pork belly, made a jicama, kale, pomegranates and pine nuts salad, air fried some spiced turmeric jicama and kale stem fries and dinner is served.
I love jicama and always prep ready to eat sticks. My mum did not allow sweets growing up so my "lollies" were always sticks of carrots, celery, jicama and water melon instead. It became a habit. When your tum tum is still wailing in torment hours after the hottest pad thai evah, you run to your fridge for a tub of yoghurt.
Added some chilled pomegranates, raw pumpkin and sunflower seeds and gulped it all down.
Ah... My tum tum thanks thee, yoghurt, friend of mad dogs and English men.My version of fish and chips. Grilled salmon in Thai spices, air fried turmeric 5-spice jicama chips, roasted veggies and red cabbage. Made a garlic dill, wine infused ricotta dressing and was chomping happily away. Takes very little to make me happy. Lol!My "one pot" air fried meal. When you have dizzy spells all day, it's the fastest and best option. Miso wagyu and veggies air fried in butter, dill and mustard.Bought a spinach soup at a tiny little corner shop run by a very smiley nice Chinese lady.
It's got no msg which is a boon, especially in a Chinese dish. Loads of spinach, minced pork, century egg, salted egg and goji. The lady told me that there is no salt either as the eggs are already salty. It's superbly tasty and a huge portion. I was full halfway through!
Would definitely go back again. If I can find the shop again... I have a rather poor sense of direction. Need a map everywhere I go.Simple meal of air fried salmon and bok choy in ginger sesame sauce with a Chinese teacup of rice. When extremely fatigued, I never have an appetite and all I want is fruit.
Luckily I had mangoes. I find at least 1/3 to half of my weekly budget goes towards buying fruits. I'm quite willing to spend more on pricey posh fruits but you'd have to kill me to buy a new frock or shoes or bag. Lol😛😌Had to go to a food fair today but I was very good. Resisted temptations and only asked for wee tasting portions.
Bought some vegetarian spring rolls and coconut water. Spring rolls were bland but the coconut water was yums.
Well, 1 out of 2 is not that bad. I'll have some yummy fruits after this to appease myself. So knackered so it was eating leftovers and fruits today. But luckily I'd gotten some jackfruit Swiss roll and fritters at the food fair day before.
Took a small slice of the roll which was fortune as it was mostly cream and hardly any jackfruit. What a disappointment. Luckily the fritter was one giant jackfruit with thin batter. With my cardamom tea, the roll was not as cloying but I had to drink loads of tea!I've gotten fonder if the roselle walnut bread and went back for another loaf. Made a sammich with onion marmalade, halloumi, apple baked ham and perilla leaves. Had a wee bit of the "butt end" left so slathered almond honey and butter on and washed it all down with my hazelnut cinnamon mocha. Reaching for a kiwi after this.I managed to get my hands on some prawns so I started dreaming of all the dishes Imma gonna make. Lol!
In the end, after staring at my fridge for a while, I made garlic miso prawns with perilla "pesto" capellini. I wish I had parmesan and pine nuts but I am out and didn't even realise it. So it is a pseudo pesto. Forgive me my Italian friends.
Still the prawns are awesome but the pesto lacked some zest. Oh well. Am happy with my yummy meal though. I have lychees after this too. Happy dance!Breakfast of champions. Toasted 2 wee slices of the roselle walnut bread, made a baked mushroom, dill omelette, and my hazelnut cinnamon mocha. Also grilled a slice of halloumi, dabbed it with onion marmalade, wrapped it in perilla leaf and chomps away!
Am happy. Now to get to work.Dutifully made a mustard and dill wagyu steak in keeping with my red meat regime.
Since I really fancy only cleaning one cooking utensil today, I also cooked up my veggies on the same air fryer. Gingery veggies with red cabbage, broccoli, carrots, young corn, bok choy and pine nuts. Loads and loads of ginger. Just felt like a ginger kick today.
And now the kitchen is closed in keeping with my IF cut off time.Couldn't face another steak today so went and got a couple of chicken livers instead. Cooked them in Japanese vegetables curry with paneer, onions, carrots and baby corn. Smothered a tiny cup of rice in the curry as I contemplate how to tackle joining all the granny squares I've completed.
Energy level is low these couple of days with a few dizzy spells so the crocheting has taken a back seat. Sigh. Come on chicken livers, work your magic. Says to anaemia... The power of livers compels thee...The easiest meal ever. Leftover veggie curry, leftover cardamom rice, mushrooms, carrots, baby corn, paneer and a heap load of arugula.
Am still limping and half bent but this is a comforting meal that was made in like 10 mins or less.
Did not meet my red meat quota the past 2 days but really cannot deal with having to force down red meat when I was unwell. Will make up for it when I was able. Sigh.Dinner was fast and simple as I pottered around like a mad scientist. Or the chef from Muppet Street.
I'd asked my friend to get me a packet of the Malaysian abalone noodles becaes I like the broth and the texture of the noodles. Added loads of red cabbage, mangetout, bok choy, goji, a tiny chicken liver and an egg.
Fast and satisfying as I made my very 1st homemade cheese. Of sorts. It's storming so I decided to stay in and read. Made a big ole bowl of Buddha/Jesus/Prophet M/Whatever Higher Entity You Wanna Call On Bowl, from the leftover veggies from yesterday, tossed with my homemade Thai spiced cheese and some eggs. Very simple but very satisfying.
Am gonna have a cuppa and read some more after this. Love reading during storms.Easy meal of leftover green curry cooked with salmon, carrots, peppers, coriander and leftover cardamom rice. Very tasty but am a little puzzled why its spicier today than it was last night. Was taken aback when I had to reach for some yoghurt to bring the heat down. What to do when you're hungry but still have some time before meeting some friends for dinner?
You make a mini meal. Grilled a very tiny wagyu, some baby corn, young asparagus and mangetout in simple salt, pepper and thyme. Everything is smaller than the palm of my hand. And I have small hands.
It's what my little nieces and nephews used to call my mini meals which I'd make for them. Lol, playhouse food.My neighbour told me in Malaysia they eat their green beans soup with coconut milk so this morning I gave it a go.
Holy cow, this was delish! And completely different from from the green beans soup of Hong Kong. It's amazing how just the simple inclusion of coconut milk changed the entire taste and texture profile of the soup!
It's much silkier and moreish with more complex notes. Honestly I like both but my mind is completely boggled how it's changed so much with just one addition.
Wow! 😵Well, had some health issues so was unable to log but am now slowly getting back into recovery again.
Picked up a crochet project left languishing while I was away and made myself some healthy food. A chicken, garlic and clam soup recipe from a Taiwanese chef and some leftover pumpkin rice.
Slowly but surely plodding along. On a positive note my weight has not increased while I was sick.Had time to go out to lunch today and decided to try a health food shop's deli today. Baked cauliflower which was yummilicious and a bamboo charcoal (eh, what???), apple, kale, lemon, cucumber and some other green stuff juice.
Despite the rather frightening ingredient of charcoal, which I only consume if having severe food poisoning, the juice was really refreshing.
Felt very virtuous after that meal. Was tempted to get an ice cream but I resisted. 😇 I'm ready for my sainthood now...The weather's been horrid and has caused my otherwise dormant asthma to rear up. Sigh.
So I'm mostly indoors bound till the air pollution here eases. Time to unearth all those crochet projects left undone the last few months.
I've recently become rather addicted to the fresh squeezed OJ from a wee shop next door. 4 oranges in a cup. But I was told it may be too high in sugar if consumed more than once daily. So I had me some black walnut soy milk with my veggie samosa today instead.Reading this while drinking black walnut soy milk is dangerous. Snorting soy milk out nostrils is not oddly enuff counted as exercise...My last meal of the day before my intermittent fasting cut off time is 2 small slices of mango cheese bread and dark chocolate almond milk.
I read about a genius hack to heat up warm milk and slosh it in the just finished jars of anything and you get flavoured milk without wasting a smidge of yummy goodness. So today I heated up my dark chocolate almond milk in my just finished peanut butter jar. Oh heavens above, why has this hack missed me all these decades?!!!It's unexpectedly cold this morning but I made a nice sizzling peppers, dill and cheese omelette with a glass of blueberry buttermilk smoothie, and it was very comforting. Gonna have a jackfruit cardamom chai butter mini cake I made yesterday and an apple and then I'm ready to face the day.Made a zero food waste meal today. Leftover marinated lamb, leftover buttermilk, leftover dill, leftover rice, and jackfruit seeds saved from my jackfruit cake, were all cooked up in a stew with cabbage and peppercorns which later struck me as strangely reminiscent of farikal.
Made a broccoli, mushroom and onion salad to go and that's about it for today. I might have a wee tub of yoghurt later and some fruit but that's the kitchen closed for today. It's a dreary morning, all grey and bleak so I thought I would con myself into thinking it's still summer with a fruit based brekkie.
Grilled fig in balsamic vinegar honey glaze with brie, one of my jackfruit cardamom chai mini cakes and a tangerine. All washed down with a cuppa cardamom tea.
I'll slowly mosey along now. The ole arthritis is a bit of a bother today but I'll persevere! 💪Dinner was razor clams today. Another ingredient I've never worked with before so I kinda cooked it like I would scallops.
Steamed them in garlic, ginger, soy sauce, shaoxing wine, 5 spice powder, sesame oil and garlic chill oil on a bed of cabbage "noodles" and goji.
Did my calculations and it was only about 280 calories. And I was so full after too! 😳
Well, that's an experiment worth repeating.Slow start to the day so I went to the Chinese deli 2 streets away to get my fave almond soya bean pudding with gingko nuts for brekkie.
Heated up a sardine curry puff in the ole air fryer for something to warm up my tummy 1st though.
Will have an orange after and then it's off to waddle through the day!Too knackered today to cook so I got me some sushi and water chestnut cake for dinner.
I've not been eating much this week as I've been under the weather again. Am finally better so Imma gonna hit the shops for fresh fruits and veggies.Had a pretty good day today so I decided to cook that chicken, garlic and clam soup I learnt from a Taiwanese chef.
I still can't believe how tasty yet healthy this soup is. Not a lick of salt or oil or any seasoning except a light toss of pepper. It's the 2nd time I've made this and it would probably not be the last.
Had it with a small cup of spiced rice and I'm now ready to tackle some reading while I have a cup of tea.Brekkie was Kungfu Panda inspired. Had gotten me some chicken and ginger buns from the posh Chinese restaurant near the train station yesterday.
Never tried such exotic buns before but they were phenomenal and just palm sized enough I do not feel guilty eating one.
Had some strong Chinese tea to go with it and now Imma ready to tackle the day. Tossing in a couple of tangerines in my bag as I trudge out.Woke up feeling terribly woolly this morning so stumbled around making the simplest brekkie.
Potato samosa with peppermint cinnamon mocha and some pomegranate.
Imma gonna head out for my haircut. Why does my hair grow so quickly? It feels just like last week that I got it cut. I hate going to the salon. Such a dreary experience. I always fall asleep there.I'm knackered. My haircut turned into an adventure to the piers. How did I get from my hair salon to the piers?
Because I have an abysmal sense of direction. But since I was there I decided to explore. Cos why not?
On the way back I discovered a Japanese supermarket with loads of fresh food.
So dinner was...oddly enough, Japanese. 😂
I love it when my misadventures result in good food.Missed lunch as I was too busy today so I made a hearty pasta for dinner. Tried out a durum wheat semolina spaghetti which is rather nice. Now I just have to remember where I bought it. 🤦♀️😳
Used the leftover razor clams and made a seafood spicy roasted garlic and hot pepper pasta with loads of spinach.
I need to put my feet up again. It was a tiring day.Because lunch was so huge, I went simple with dinner. Just used up the leftover pine nut rice and made salmon and broccoli fried rice.
Just having 1/2 of the rice with some strawberries and honey lemon tea. Am gonna attempt to make some onigiri with the fried rice as I just realised I have a Dr's appointment tomorrow and might not have time to cook.Had brunch today. Yup. I overslept again. Sigh.
But this time I know the reason. It's because I woke up in the middle of the night and had the hardest time falling asleep again, which resulted in oversleeping this morning.
A little groggy and achey, I made grilled cheese and tomatoes sammiches with a cuppa cardamom tea. Will have a wee peach after.
Am going to attempt to plod along today despite feeling woozy. So much to do.My friends stayed for cakes and coffee so I busted out the lychee mango cheesecake I'd gotten at Starbucks for them. I've always wanted to try it but just couldn't justify eating a whole slice by myself. So having my friends share it allows me to assuage my curiosity without feeling guilty.
It was phenomenal. I might have to get it again. But I'll slice it into smaller pieces and portion them out as it's quite decadent.Brekkie was a hurried affair so I just reheated the pork belly bun from the food exhibition, made a cuppa cardamom tea and had a huge fuji apple. Ready, set, waddle...Paying For Hot Air takes on a while new meaning...Woke up really early for some reason today and was unable to get back to sleep. So I got up and got busy.
Made meself a big glass of blueberry milkshake (no sugar, go me!), toasted the end bit of my pumpkin bread and a blueberry scone I got from my fave bakery. Was planning to make blueberry jam but I've been nibbling on them so much I don't think I have enough anymore! 😂
Oh well, maybe I'll make pomegranate jam instead... Decisions, decisions...Took a break for a bit of tea and crumpets. Had a choccie scone from my fave bakery and tried the most stupendously yummy cheese evah!
Got this rich nut cheese dessert from the Japanese supermarket. Would never have bought something like this but the nice lady reeled me in with a taste test. And that was that. It terribly pricey so I will only it as a special treat.Made a simple dinner of reheated seaweed, enoki, bok choy miso soup from last night, and air dried my version of sweet potato jeon. Topped the mini jeons with the spicy fish otak otak I got from the food show earlier. Did not meet my red meat requirement today but I'll make up for tomorrow as Imma gonna make pate.Every time the weather gets cold and dreary, I feel the urge to bust out the fruits.
After a horrific yesterday I decided to treat myself nicely today. Brekkie was toasted citrus walnut bread with a giant slab oh camembert, sprinkled with pomegranate arils and the pomegranate syrup I made before.
Toasted up a jackfruit fritter, made q cuppa cardamom tea and I'm ready 5o waddle off for the day.I'll take R2, thanks very much. I think they missed C3po though. And why Chewie instead of an ewok? Also think a Daft Maul one would be cooler than Daft Vader just from a colour and design aspect.
Unfortunately, all academic for me since these only ship in the US. Have been thinking of investing in a multi cooker to consolidate and streamline all my cooking appliances. Would also make bone broth brewing a lot easier. Bone broth... Indispensable for intermittent fasting.I'm almost all out of veggies and fruits and have to resist the temptation to hit the shops today but I have to stay strong!
Sunday is groceries day. Stay strong!
So I made a brekkie for strength. Made tamago with dill, gouda and the fish otak otak I fished from the freezer. Also had a mango yoghurt loaded with pomegranates and a cardamom tea.
Will try to get a walk in if the weather holds. Been rather erratic recently. The weather. Not me. Well, actually...Made beef stew for dinner. Been a while since I've made beef stew. This one is reflective of me. Lots of spices and herbs, loads of veggies and almost no salt nor sugar, except for the little bit of salt used in the cornflour mix for the beef.
Super tasty. Imma gonna have some pomegranates and tea after, before heading out to the movies.Darn it. Caught a cold and spent the day sniffling in bed surrounded by a mountain of tissues.
Luckily, I have comfort food. Just reheated the beef stew I'd frozen, steamed some broccoli and made a pot of pine nuts and dill rice. Very warming and at least I can taste it through the ickiness of runny nose and sore throat.
Will make myself loads of hot honey lemon tea tonight as I cuddle under the sheets. It's storming down and my cold is still bothering me. So brekkie was a slow, plodding affair.
Soft boiled egg, the final endy bit of citrus walnut bread with butter and the blueberry pomegranate jam I'd made, a wedge of the divine rich nut cheese, peppermint cinnamon hazelnut mocha and some strawberries.
I'm supposed to go meet someone for lunch but I still feel poorly and it pissing out there. Will it be terribly rude to take a rain check? While my slow cooker is chugging along with the farikal, I made a quick, easy comfort food to tide me over.
Seaweed miso soup with enoki, cabbage and salmon belly.
Perfect on a stormy day.Having an early dinner. It's cold, damp and miserable today so I made comfort food again.
Farikal for my required red meat intake today, pumpkin mash and steamed broccoli.I've been very good meeting my red meat requirement this week so today I rewarded myself with salmon.
Made a one pan roasted salmon marinated and basted in an avocado oil, red onions, garlic, ginger, dill, dijon mustard and lemon dressing. It's accompanied by asparagus, Japanese sweet potatoes and leek. Sprinkled a little grated cheddar and dinner was served.
Super yums. Will have some blueberries, strawberries and tangerine for dessert then Imma gonna call it a day. IF cut off time.Dinner was stupendous. I reheated yesterday's Hokkien noodles and added bok choy to the already veggie filled dish.
I also made the yummy chicken, garlic and clam soup. I wish I could write Chinese cos I would send that Taiwanese chef a thank you note. This has becomes one of my fave soups to make cos it's so simple yet so tastyHad a very good sleep so was full of beans when I wake. Happily made a smoked duck breast with brie and mayo mustard on toasted orange walnut bread. Also made two slices of buttered toast with marmalade and my blueberry pomegranate preserves. Oh so good washed down with my peppermint cinnamon hazelnut mocha.
Finish off with 2 tangerines and Imma ready to take on the day. After I watch a bit of this Korean police drama I've recently gotten addicted to. 😂Some days you just wanna indulge. Today was the day.
I made blueberries and buried stuffed French toast. Liberally spread the blueberry and pomegranate preserves I'd made on orange and walnut toast, stuffed a layer of brie in there then soaked it in an egg mixture of egg, of course, cream, cinnamon, vanilla extract and a dash of maple sugar. Popped that in the oven with a water chestnut cake while I made a cuppa peppermint cinnamon hazelnut mocha.
Finished off with some tangerines. After the decadent brekkie, I was sensible again. Made a seaweed miso soup with loads of enoki and bok choy with a couple of salmon belly.
Also heated up some noodles, which I jazzed up with some egg and broccoli for extra protein.
Imma closing the kitchen early as a couple of us are going to visit a friend in hospital.Been running a fever all day and am terribly woolly headed. But managed to make a big pot of miso kimchi vegetables and salmon soup. Heated up some leftover pine nut and dill rice and had the soup.
Am heading to bed. Hopefully, I'll feel better when I wake up.
