Thoughts on week one

Today is the beginning of week 2 on my chosen lifestyle change. It is so daunting to think of this as a life style change, which is has to be for health reasons. My biggest problem is figuring out exactly what to eat and expanding my choices. I know it will get easier once it is second nature but I get so impatient. The good thing is how successful I have been this week with exercising every single day, even if it is only 10 minutes some days. Now to add some strength training.

    I am not organized enough like some people to plan menus/meals for a week in advance, but I do have things on hand. Once a week I cut up a whole head of lettuce and then put in all the extra veggies I want, expect for the tomtoes. Then I always have salad ready to go for a meal or for a side salad. I put it in Tupperware and it actually keeps for 5 or 6 days (other containers don't do quite as well) I live by myself, so a casserole is easy to freeze individual portions for quick meals to pack for work or for when I don't have much time to prepare something. Last night I roasted a turkey so I have turkey for sandwiches or for salads. I then cooked the carcass to make stock for soup. I will again freeze portions of that.

    At first that was basically what I did. Now I'm trying to find at least one SparkRecipe or modify one of my own recipes to make them more healthy. Again, I usually end up with multiple meals. There are times when I get a little bored with some of this,too, but that's when I really start to search for other recipes, etc.

    My breakfast is usually just cereal, strawberries, and milk, sometimes with some protein thrown in. On weekends I might go with an egg dish; other days it might be toast, PB, protein. That's the one meal I don't need much variety in, but the other meals, it's getting so that I look for new things, but always have those standbys ready in the freezer.
