I am dreaming of the May long weekend

We have plans to go camping this weekend and I can't wait! We bought a tent trailer this year as we are hoping to camp more than the one or two times we have gone every summer for the past four years. We have never been out this early and I am already dreaming of hikes with my daughter on my back and campfires with s'mores and guitars around a camp fire.

Here's my concern, can I maintain my healthy eating while only cooking on a two burner camp stove and a hibatchi BBQ and leave room for at least one s'more? The short answer, I have decided is yes, yes I can.

Sure, it takes planning. I need to plan every meal and snack, and only have healthy extras so if I want an extra bite of something after a long walk in the woods then I can grab something that won't blow my limit. I need to make sure I have every cooking utensil and pan ready to go and that all ingredients are accounted for. I need to make list, after list, after list (so far I have four different lists that have been updated three times). I need to realize that my s'more at the end of the night will probably take me over my daily calories for losing weight but it won't make me gain weight if I stick to everything else. That's called compromise and moderation (I have to work really hard at these two).

If anyone has any tricks of the trade for camping, I would love to hear them! I am so excited to get started I can barely wait. Happy May 2-4 everyone!
