I needed something quick to cook for my husband tonight and I have been trying to find a way for him to enjoy some type of pizza without gluten and dairy. I recently purchased two packages of dairy-free "cheese" to experiment with SO, I scrambled some eggs with italian sausage, chopped peppers and onions, tossed them in a pan, covered with marinara sauce and the dairy free mozzarella. Remarkably, it was a success! My husband liked it and I tried a bit and I liked it. The dairy free mozzarella was not disgusting!
My other success this week (from yesterday): sauteed spinach. This was a success, in that I made a recipe my husband likes that gets him the nutrients he needs. It was a bonus that it wasn't the most disgusting thing I have eaten but I think I will continue to eat my spinach raw. I just can't tolerate the texture of cooked spinach.
