No more fancy plates

I'm not at my best when it comes to meal planning. I'm the type of person who would live off of yogurt and instant oatmeal if I could. Of course, there would be the occasional piece of lasagna, a bowl of chili, or sub sandwich when I got the craving. Since I have had to watch my diet (sans not having money to eat) I hate thinking about mealtime.
I texted my husband this morning. "Are you happy with meat and potatoes. Are you honestly happy with meat and pasta? Or meat and your favorite fruits?" Hubby is not a vegetable eater unless it's mushrooms or spinach. Trust me I have tried to get him to eat more vegetables during the twenty years we have been together. His response was "Full tummy. I'm Happy".
For most this wouldn't be a big deal. You see my husband loves watching cooking shows on all the cooking television shows. I thought that since he loved watching those shows that I needed to cook like that. Most of the time I can't cook like that because of our budget or it's full of so much sugar that I will not cook it.
This is just a blessing because it means that I can go back to the basics. The basics are easier to keep track of calorie wise than trying to figure out some elaborate recipe. I'm able to healthy comfort food that I know that he will eat. Food for a simple guy and a simple family.
Ultimately what I'm trying to say is that this is going to make meal and snack planning so much easier.
