Who eats a plant-based diet? I need recipes!

If you have Netflix, I highly recommend to everyone to watch "The Game Changers". Things we learned from it have convinced us to try doing 2 days a week meatless to start with. I have a few recipes I've picked up over the years to use on Fridays during Lent, but not enough to completely change over to a plant-based diet, which is what we want to work toward.

    Andrew went totally vegan for about 6 weeks. He was buying a lot of expensive specialty foods but eating more fresh veggies, too. He stepped back because it was kind of complicated at dinner since I cook keto. He also wasn’t interested in the vegan recipes. Now he eats what I make for dinner (or gets what he normally would when we go out.) But he still makes rice and beans for lunch and adds a veggie burger. He buys the dairy-free cheese. He has been taking apples, bananas and carrots to work with him. And he likes So Good coconut ice cream, which he discovered during his vegan time. All in all, it’s been very good for him since he wasn’t eating a lot of vegetables before.

    There are a lot of good recipes here under Spark Recipes..and Google is an endless source of free recipes.
    Plus no doubt Cheri is a wonder resource when it comes to recipes!!
    Start easy and move slowly..the body needs to adjust its enzymes and digestive processes..too much too soon can lead to being very uncomfortable and even say Nah I don't think so! Our bodies resist change so get ready for some cravings and if needed give in to them..in cautious amounts.

    So plant-based is meatless and dairy less and egg less. I don't have a recipe except one, in Spark recipes ask for Whole Food Plant based Potato Omelet. It's so good.

    Black bean burritos/burrito bowls, frittata, chickpea curry, and quinoa bowls/patties are some of my favourite no meat dishes. I can send recipe links, if you'd like 🙂
