Spark Recipes Get An A+

Over the years I've moved away from using cookbooks and depending on the internet for recipes. And one site that has great recipes is Spark! Last night I decided to try the Vegetarian Vindaloo recipes.sparkpeo

It was GREAT! With that dish alone we got our vegetables for the day. Low fat, high in taste, spicy, but not too hot. Instead of the Serrano pepper I used poblano which also seemed pretty hot so didn't use it all and threw out the seeds. The calories are for 2 1/2 cups which was too much since we served it over brown rice. Plenty of leftovers.

There was a lot of chopping and in hindsight I could have saved time by chopping everything earlier. All went in at the same time. Cooking time just over 30 minutes.

If you haven't tried any of the recipes here you are missing some great meals. For vegetarians (or flexatarians) there are plenty of good options.
