chilled bean salad, vinaigrette dressing
mine is diced tomato+ green bean+ white navy bean today....

emoticon any combination of cooked and drained bean chilled with vinaigrette is delish!

I didn't post much in April - but this month I did try a sauerkraut made my a local Polish cafe - I liked it much, MUCH better than the stuff I've had from a jar, or my failed home-made experiments.

garlic powder paprika salt dry parmesan olive oil + frozen mixed veggies + diced raw potato
in salad bowl mixed together....

nonstick spray sheet of foil (dull side up) add tossed veggies : pop in cold oven
425 degrees & timer for 40 minutes...
emoticon it's a hot salad where the 'dressing' is put on first instead of last, I've had this with various combinations of fresh & frozen: broccoli cauliflower carrots peas green beans corn and with potato and or cabbage

Cranberry Walnut Salad with Sesame Ginger Dressing

I didn't follow this Spark recipe but got the idea from it, bought the dressing and a spinach spring mix.


Spinach, Walnut, Cranberry Salad
Ingredients
Spinach
Walnuts
Cranbarries
Oil
Vinegar
Sugar
Nutritional Info
Fat: 17.0g
Carbohydrates: 21.6g
Calories: 234.3
Protein: 1.8g
1/3 c walnuts
1 package spinach, rinsed and torn into bite-size pieces
1 cup dried cranberries
2 tablespoons toasted sesame seeds
1 tablespoon poppy seeds
1/2 cup white sugar
1/4 teaspoon paprika
1/4 cup white wine vinegar
1/4 cup cider vinegar
1/2 cup vegetable oil
Directions
1.In a large bowl, combine the spinach with the walnuts and cranberries.
2.In a medium bowl, whisk together the sesame seeds, poppy seeds, sugar, onion, paprika, cider vinegar, and vegetable oil. Toss with spinach just before serving.


Serving Size: makes 8 servings

SPROUTED LENTIL SALAD
Lentils are small, round legumes that come in many sizes and colors. They are popular in traditional dishes around the world. While lentils, like all legumes, can be difficult to digest, sprouting before cooking makes digestion a bit easier for most people.


INSTRUCTIONS FOR SPROUTING LENTILS
1. Rinse cup lentils, remove any stones or debris, and place in a quart-size sprouting jar or other sprouting container.

2. Add 2-3 cool cups water, filling the jar three-quarters full; cover jar with a sprouting screen or mesh sprouting lid. (I reversed a mini sieve that fits mouth of jar)

3. Soak lentils at least 8 hours or overnight.

4. Drain and rinse lentils thoroughly. Invert the jar over a bowl at an angle so that the lentils will drain while still allowing air to circulate.

5. Repeat rinsing and draining 2-3 times per day until sprout tails appear. Taste sprouts (not lentils) daily; discontinue rinsing and draining when sprouts have reached desired length and flavor.

6. Drain for several hours before cooking or transferring to a covered container.

7. Store sprouts in the refrigerator up to 1 week.

Unlike most legumes, lentil sprouts may be eaten raw. I like 'em as a salad.

Some may experience discomfort from consuming too many raw lentil sprouts.
Cultures for Health.com recommend cooking sprouted lentils before consuming if raw food bothers you.

ps. A general rule is to soak at least 8 hours. Some larger seeds may require a longer soak. Soak until the seeds have doubled in size. Keep in mind that temperature also affects soak time. In warmer temperatures, the soak time is shorter. In cooler temperatures, soak time is longer, and larger seeds like chickpeas or kidney beans may require a 24-hour soak.

salsa & mayo whipped up together tastes like a spicy "French Dressing" ....
I like light mayo and "medium" salsa combination

right off the bat I'm starting this month's goal with coleslaw
... Miracle Whip Light brand sandwich spread mayo has a 'sweet tang' taste to it ~ I dilute it with a little cold water, just enough for mixing slaw.

ps. I was taught coleslaw basic dressing blends milk mayo sugar vinegar salt.
